Spicy Masala Egg



Simple recipe.... will go along with all type of rice.The gravy will be very Flavor full,so try with Dosai /Idli too.If u want more Gravy add More Onions and Tomato.


Ingredients:
  1. Boiled Eggs-3   *Make Gentle Crack all around the eggs to get flavor inside*
  2. Onion- 1 (Sliced)
  3. Tomato-1 big (Chopped)
  4. Ginger Garlic paste-1 tables spoon
  5. Garam Masal-2 teaspoon
  6. Red Chilly powder-2
  7. Salt - to taste
  8. Coriander Powder-2 teaspoon
  9. Mustard-1 teaspoon
  10. Curry Leaves/Cilanro-Few
  11. Oil-2 table spoon
Method:
  1. Heat Oil in pan Splutter Mustard and curryleaves.
  2. Add Ginger Garlic paste and fry.
  3. Add Onions,fry in oil till gets golden brown in low flame.
  4. Fry Tomato next,till gets mushy.
  5. Now add all dry Powders(Red chilly,Coriander,Garam masal) Mix well.Add Salt.
  6. Add little water and cook.,add some chopped cilantro for extra flavor.
  7. Once this gravy came semi thick add Boiled Egg and Mix gently.
  8. Cook it 2 more min in low flame.
  9. Ready to have.

Arisi Parupu Satham /Toor Dal Rice(Lunch Box Special)



                                 



Ingredients:
  1. Rice -1 cup
  2. Thoor dal-1/2 cup
  3. Onion-1 medium (Chopped)
  4. Tomato-1 big (Chopped)
  5. Garlic- 2 nos (mashed)
  6. Green Chillies(R) Red chilly-2 nos(Slitted)
  7. Mustard/Jeer-1 teaspoon
  8. Curry leaves-few
  9. Hing
  10. Rasam Powder/Rasap Podi-1 teaspoon full
  11. Water- 2 and 1/4th cup.

Method:

  1. Soak Rice and Dal together for 15 min.
  2. Heat oil In pressure cooker pinch Hing and  splutter Mustard,jeera and curry leaves.
  3. Add Green chilly and mashed garlic fry for 1 min in low flame.
  4. Add onions and fry till changes soft.
  5. Add tomato and fry till gets mushy.
  6. Now add water &Salt Bring  to boil.add Rasam Powder & Cilantro on top and pressure cook it.3 Whistle Is fine.
  7. Once pressure downs,mix gently.The rice and dal have to be separate.
  8. Ready to serve with Pickle (R) chips.

Healthy Oats Dosa/Dosai

Take a small amount of Oats,make a powder in blender and store it.This way will make dosa easily when we want.Kids will like it.
Ingredients:


  1. Powdered Oats-1 cup
  2. Rava/Sooji-1/4 cup 
  3. Rice Flour-1/4 cup
  4. Jeera-1 teaspoon
  5. Ginger- few (chopped)
  6. Green Chilly/Cilantro-Few (chopped)
  7. Salt
  8. Oil
Method:


  1. Mix all Ingredients together in a bowl except oil.with adding water.
  2. Rest it for 15 min.
  3. After,check the batter and add enough water and bring to dosa batter consistency.
  4. Heat dosa Pan,and make  small dosa with little oil all around.
  5. For crispy dosa close lid and cook.
  6. Ready to Serve with Any chutney.
I served with Carrot Chutney.My Kid liked a lot :)....

Onion Masal(For Idli- Dosa)



This's a very Simple and easy recipe,Can we make in 8-10mins. 
Ingredients:

  1. Onion-1 medium (stripped)
  2. Tomato-1/2 (chopped)
  3. Garlic-2 nos (mashed)
  4. Besan Flour/Kadalai Maavu-2 tablespoon
  5. Green Chilly-2 nos
  6. Mustard/Channa Dal- 1 teaspoon
  7. Curry Leaves /Cilantro
  8. Turmeric powder/Salt
Mix the Besan flour with 1 cup  of water.Avoid lumps.Keep aside.

Method:
  1. Heat oil in Pan/Kadai splutter Mustard,channa dal.
  2. Add Garlic,Green chilly,curry leaves and onion fry well.
  3. Add tomato and fry for 1 min.Put salt and turmeric powder.
  4. Now add the Besan flour mixture slowly and mix well.Add &Adjust  water for Gravy consistency.
  5. Cook it for 3-4mins.
  6. Serve with Hot Idli(R) Dosai

Spinach Poriyal

Ingredients:


  1. Spinach-2 cups (Chopped)
  2. Yellow Split Moong Dal-1/4th cup
  3. Onion-1/2 cup (Chopped)
  4. Red Chilly-1 nos
  5. Garlic-2 nos(Crushed)
  6. Shredded coconut-1 table spoon
  7. Mustard seeds-1 teaspoon
  8. Chana dal/Urad dal-1 teaspoon
  9. Salt /Turmeric powder

Soak Yellow moong dal in water for 15 min,drain and keep aside.

Method:
  1. Heat Teaspoon of oil in pan,splutter Mustard ,chana dal and Urad dal.
  2. Add mashed garlic and red chilly roast it.
  3. Now add the soaked moong dal and roast in oil for 2 min.in Low flame.
  4. Add Onion and fry.
  5. Add chopped Spinach& salt per taste.Close the lid and cook .
  6. Cook Till the spinach leaves shrink and Half cooked.
  7. Finely add shredded Coconut.(Optional)
  8. Ready to serve.
Note:I didn't use coconut.,if u like can add the shredded coconut and switch of the flame.

Cauliflower Patani Kurma/Cauliflower Peas Kurma/Gobi Peas Curry

Cauliflower Peas Kurma,this's Coconut based Curry..... will go well with Chapathi,Dosai, biriyani..&white rice too..Here i have given semi gravy recipe.If U want more Gravy Grind some more Coconut.


Ingredients:
  1. Cauliflower-2 cup(diced)
  2. Peas-1/2 cup
  3. Onion-1/2 medium (chopped)
  4. Tomato-1 (chopped)
  5. Turmeric powder
  6. Cinnamon-one 1/2" piece
  7. Cloves-2
  8. Ginger garlic paste-1 teaspoon
  9. Red chilly powder/Salt
  10. Cilantro/Curry leaves
  11. Oil
To Grind:
  1. Coconut-1/2 cup
  2. Kas Kas-1 teaspoon
  3. Fennel seeds-1 teaspoon
Method:
  1. Heat oil in pan,splutter Jeera.
  2. Add cinnamon and cloves.
  3. Put ginger garlic paste and fry well
  4. Now add the onions,cook for 1 min.
  5. Add the tomato and fry well.
  6. Add the dry powders.(Red chilly,Turmeric powder)
  7. Put the Cauliflower and peas,mix well and close the lid and cook till get bit soft.(Don't Over cook it,I have to be Crunchy only)
  8. Once that step over,add the coconut paste and little water and allow to boil for 2 -3 min in low flame.
  9. Check Salt and Garnish with Cilantro.
  10. Ready now!!
                         
Note:

  • While cooking Cauliflower Cook Carefully Bcaz it'll cook soon and will go Mushy.Half cook is fine.
  •  Can use Dried Green Peas also.Soak and pressure cook it before using.

Tasty Mushroom Biriyani

 
Ingredients:
  1. Seeraga Samba Rice/Basumathi Rice- 2 cup
  2. Mushroom-2 cup (Diced)
  3. Onion-1 cup(Sliced)
  4. Tomato-2 nos(Chopped)
  5. Green Chilly-2
  6. Ginger Garlic Paste-2 table spoon
  7. Whole Gram Masala:  1.Cinamaon-1" piece 2.Cloves-3, 3.Cardamom-1 (Crushed with skin),4.Black Cardamom-1,5.star anise-1
  8. Cilantro/Mint leaves - few
  9. Oil and ghee -2 table spoon (Mixed)
  10. Lemon juice -1 table spoon
  11. Water-3 Cups
To Grind:
  1. Almonds/Badam-4 nos
  2. Cashew- 4 nos
  3. Cilantro- 1/2 cup
  4. Mint-1/2 cup(Leaves alone)
  5. Red Chilly- 2 nos.
Soak Almonds/Badam for 15 min in water and grind all together with little water.Soak the rice for 30min.

Method:
  1. Heat Oil in the Pressure cooker,Put all whole dry masala and roast it.
  2. Add green chilly fry it.Then add ginger garlic paste and fry till raw smells goes out.
  3. Now add slice onion and fry till gets  Soft.(Don't roast more)
  4. Add tomato and fry till it mix with all mixture.
  5. Now put turmeric powder,jeera powder,garam masala and roat well.
  6. Add the grounded Mixture and Fry well in oil.
  7. Once u fried well add,Diced Mushroom and fry in oil.(Don't add water,Mushroom will lose water itself)
  8. Half Cook the Mushroom.
  9. Now pour Required water and add lemon juice.
  10. Check salt as well.Put chopped cilantro and mint leaves on top.




                                            
10.And close the lid.Take 3 whistle.
11.Once Pressure cums down,open the lid,slowly and  mix the rice with fork.
                               

                             






11.Serve Hot with Onion Raitha (R)any veg Gravy.

Note: For more flavorful Roast the soaked rice in teaspoon of ghee.U Can Try the same Method with Vegetables also,for tasty Vegetable Biriyani :)...

Date Milk Shake





Ingredients:


  1. Milk-2 cups
  2. Dates-4 nos
  3. Vanilla Ice Cream-2 scoop
  4. Crushed Ice(R)Ice cubes
Clean the Dates ,take out the pits and Soak in normal water for 30 min.,

Method:



  1. Add Dates and little Milk,in Blender.Blend that well.
  2. Once,Dates Grounded well,add remaining Milk,Vanilla Ice Cream.Again Blend it for 30sec., 
  3. Now,Take a Serving Glass put some crushed ice and pour the shake.
  4. Keep Little Ice cream and Bit of Date piece on top.
  5. Ready to Serve.
                         


Note:No need of Sugar.

Ragi Dosai

This's a very Healthy Dosa for all age people. 
Ingredients:


  1. Ragi Flour- 1 cup
  2. Urad dal Batter-1/2 cup
  3. Green chilly-Few (Chopped)
  4. Onion-1/2 (Chopped)
  5. Salt
  6. Oil
Soak Urad dal for 3-4 Hours and grind with little water.Mix Ragi Flour,Urad Dal Batter,& Salt with Required water.And Ferment The batter.





Fermented Ragi Batter
Method:


  1. Now mix again the batter with ladle,add water if required.add green chilly.
  2. Then Heat a Dosa Pan and make Dosai like regular dosai.
  3. Top the Dosai with Chopped onion.
  4. Serve Hot with,Coconut Chutney.(Really you will like it)






                         



Tip: U can save some Urad dal batter alone, while grinding  Dosa (R)idli batter.Take One hand full of Urad dal batter and mix with 1 cup of ragi flour.

Banana Smoothie



Very Simple,Basic Smoothie Recipe.We can make in Minute.
Ingredients:

  1. Banana- 1 medium(Cut in to big piece)
  2. Milk-1 and half cup
  3. Curd-1/4 cup
  4. Sugar (Optional)
  5. Chocolate Syrup (Optional)
Method:


  1. Blend all of the above in Blender.Except Chocolate Syrup.
  2. Transfer to Glasses.Add some Crushed Ice in to it.
  3. Decorate with Chocolate Syrup.
                                                   

Gobi Tikka / Cauliflower Varuval

 This's Fry will go along well with all type of rice,Biriyani,rasam satham,curd rice,Bise Bela Bath etc.,Can keep as Starter (R) Tea time snack too....Definitely kids will love it :) 
Ingredients:


  1. Cauliflower /Gobi-2 cup 
  2. Curd-2 teaspoon
  3. Lemon juice-1teaspoon
  4. Ginger Garlic Paste-1 teaspoon
  5. Corn Flour-1/2 cup
  6. Garam Masala-1 teaspoon
  7. Jeera Powder-1 teaspoon
  8. Salt /Red Chilly Powder-to taste
  9. Red color- pinch (optional)
Method:


  1. Cut the cauliflower in to a medium size pieces.
  2. Take a wider bowl,Put all ingredients together except Califlower.Mix with little water.
  3. Don't put more water.We r going to soak the cauliflower in to this.So make semi thick Batter.



    4.Now take the CauliFlower/Gobi and mix well with hand.Rest this for 30mns.
    5.Heat a Frying pan,and fry in medium high flame.Drain the oil and transfer in to Paper Towel.
   6.Ready to have...




Note:While frying don't put more in same time.,fry in little amount.

Stuffed Vegetable Paratha/Vegetable stuffed Paratha

One more Stuffed Paratha...One more Creation of Mine.Enjoy... 


Ingredients For Stuffing:

  1. Carrot-1 nos (shredded)
  2. Beans- 10 nos (Finely chopped)
  3. Cabbage-1/2 cup (Finely chopped)
  4. Ginger Garlic Paste-1 teaspoon
  5. Garam masala-1/2 teaspoon
  6. Red chilly powder/Salt to taste
  7. Lemon juice-1 teaspoon
  8. Cilantro-few 
Ingredients For Dough:

  1. Atta Flour-1 cup
  2. Maida-1/4 cup
  3. Jeera-1 teaspoon(optional)
  4. Salt
Take a wide bowl and mix all ingredients with enough water,make soft tight Dough.Close with a lid &Rest it for 15min.


Method:

  1. Heat oil in pan,add ginger garlic paste fry well.
  2. Then add Cabbage and fry little.
  3. Now add carrot and Beans together,mix well.Add dry all dry powder(Red chilly powder,Garam masala,Turmeric powder,salt).
  4. Don't Over cook it,just cook in low flame.Vegetable have to be in half cooked only.Just close the lid and cook for few min.
  5. Finely add cilantro,give a mix and turn off the flame.Allow to cool Down.Now,stuffing is ready.
  6. Heat a normal Chapathi Pan,and start rolling the chapathies,take 2 teaspoon full of Stuffing,keep inside and roll in to a parathas.


        

    7.Then roast like Regulars Chapathi(R)Parathas.
    8.Serve Hot with Curd.
                         
I have used Cabbage instead of onions,You can use onion if u like.You can keep same stuffing for Bread  sandwiches too.


Note: Chop the Cabbage and Beans in to very fine pieces.Otherwise rolling will be tough.

Eggless Curd Cake

This's simple cake recipe,For this you no need a cake blender just our Mixer(Mixee) is fine.If u had Cake blender use that.
Ingredients:


  1. Maida/All purpose flour-1 3/4 cup
  2. Curd-1 cup
  3. Oil-3/4 cup
  4. Sugar-1 cup
  5. Cooking soda-1/2 teaspoon
  6. Coco powder-8 teaspoon
  7. Milk-2 table spoon
  8. Vanilla essence-1 teaspoon
  9. Coffee Powder-1/2 teaspoon (optional)
Method:


  1. Preheat the oven in to 350 degrees F.Grease a 9" pan with butter (R)ghee.

2.Sieve all dry ingredients first (i.e., Maida,cooking soda,coco powder and coffee powder) and keep aside.  

3.Take mixer ,add curd,oil,and sugar and blend it till all  dissolved.

4.Now add little by little of Sieved Mixture (Maida,soda,coco,coffee).blend it for 2-3 min.

5.Now add vanilla essence and milk..finelly beld it for 2-3 min.

6.Transfer all the mixture to greased Pan.Tap it.             

                   
7.Now keep in to Oven and Bake it for 35-40 min.,
8.After that take out,and let it get cool around 30min.,and cut it.


                     



    Insert a thin knife (R) tooth pick in center of the cake to check whether  it baked are not.Like how we check Idlies...If u got a batter in your knife,cake have to bake still more min.So,adjust the time how your cake is Baking.First set the time for 25 min and then add 5 min.


Note: If u want,you  can add some chopped nuts(Almonds,cashew) in cake mixture and bake it.

Peerkangai Kadalai Kulambu/Ridge Guard Peanut Curry



Ingredients:

  1. Peerkangai - 1 cup (chopped in to bite size)
  2. Ginger Garlic paste-2 teaspoon
  3. Tamarind Juice-1/2 cup(Thick Juice)
  4. Red Chilly powder/salt-to taste
  5. Turmeric powder
  6. Mustard-1 teaspoon
  7. Curry leaves
  8. Gingelly oil
  9. Kadalai/Peanut-1/2 cup(Boiled)
If you used, raw peanut/Kadalai Soak atleast for 4 hrs.and pressure cook with salt.U had fresh no need to soak just pressure cook it.
 

Semi Grind it:(Separately)

  1. Onion-1/2 cup
  2. Tomato-1 nos
To Grind:(Grind in to very fine paste with adding little water)

  1. Coconut-1/2 cup
  2. Jeera-1 teaspoon
Method:

  1. Heat oil in Pan,splutter Mustard and curry leaves.
  2. Put Ginger garlic paste,fry well.
  3. Now add Semi Ground Onion,fry well.
  4. Then add semi grounded Tomato and fry till oil lose out from edges.
  5. Add pinch of turmeric powder,and red chilly powder.
  6. Add Ridge Guard/Peerkangai ,fry in oil for 1 min and close the lid and cook for 2 min
  7. Now add tamarind juice and boiled Peanuts/Kadali close the lid and cook for 3-4 min.In between give mix.
  8. Once the vegetable cooked check salt as well.,Pour grounded Coconut,cook it in a low flame for 2-3 mns.
  9. Once all done.,The kulambu/curry is ready to serve with white rice.

Note: U can use coconut milk instead of grounded coconut.

Thakkali Kulambu /Tomato Coconut Curry(For Idli -Dosai)



With Egg Dosai this Kulambu will go very nice.Even with chapathi too..
Ingredients:


  1. Onion-1/2 cup (Chopped (R) stripped)
  2. Tomato-1 small(Chopped)
  3. Mustard-1 teaspoon
  4. Chana dal-1 teaspoon
  5. Curry leaves/Cilantro-Few
  6. Salt/Turmeric
  7. Oil



To Grind:



  1. Coconut-1/4 cup
  2. Tomato-1
  3. Cinamon-1 small piece
  4. Cloves-2
  5. Red Chilly-2
  6. Fennal seeds-1 teaspoon
  7. Potukadali (Daliya)- 2 table spoon


                          

Method:
  1. Heat oil in pan,splutter mustard.
  2. Roast channa dal,curry leaves & add onion and fry till cums transparent.
  3. Then add chopped tomato,fry gets mushy.add pinch of turmeric.
  4. Now add grounded Mixture and enough water and close the lid and cook for 3-4 min.In between give a mix one time.
  5.  Check salt and adjust gravy with water.
  6. Once raw smell goes,garnish with cilantro.
  7. Ready to serve with hot dosa..Idlies.

Note: 


If u making more Kulambu add little more Potukadali(Daliya) alone.if u add more  the Kulambu will turn very thick.

Masoor Dal (Curry)





This's a basic Dal curry.,U can do same method with Moong gram dal(Pasi parupu) also.
Ingredients:

  1. Masoor Dal-1/2 cup
  2. Onion-1/2 cup (chopped)
  3. Tomato-1 (chopped)
  4. Garlic- 2 nos (finely chopped)
  5. Green chilly-2 (slit)
  6. Mustard /jeera-1 teaspoon each
  7. Garam masal-1/2 tespoon
  8. Oil/salt
  9. Half lemon
Method:

  1. Pressure cook the dal with salt and turmeric powder.2-3 whistle is enough.
  2. Heat a Kadai with 2 teaspoon of oil,splutter mustard,jeera and put green chilly and garlic give a mix.
  3. Now add Onions and fry till turns color.
  4. Add tomato,fry till mushy.add salt.
  5. Then Pour the dal in to Kadai,give a mix let it boil for 2 min.,add little water to semi thin consistency.
  6. Add Garam masala powder and mix,cook it for 1 more min.,
  7. Finely Garnish with cilantro.Serve hot with Chapathi,rice...
  8. Squeeze lemon on top while having.(Optional)

Poondu Kulambu/Garlic Curry for Rice



This Ingredients serves 2-3 people.1 spoon of Kulambu/Curry is enough for 1/2 cup of rice.A spicy curry....a best home remedy for Cold.
Ingredients:


  1. Garlic-6-8
  2. Onion-1/2 cup
  3. Jeera/Mustard
  4. Tamarind juice-1/4 cup(Thick juice)
  5. Curry leaves-few
  6. Gingelly oil
  7. Salt/Turmeric powder
Roast and Grind:


  1. Pepper Corn-2 teaspoon
  2. Red chillies-1
  3. Coriander seeds-2teaspoon
  4. Jeera-1teaspoon
  5. Kas kas-1 teaspoon
  6. Garlic-5 nos
  7. Onion-1/4 cup
  8. Coconut-2 tablespoon 
Roast all ingredients with half teaspoon of oil & grind with enough water.Use small onions(shallots) if u have.



Method:



  1. Heat 2teaspoon of oil splutter mustard,jeera,add curry leaves,Garlic,onion and fry well.
  2. Now add tamarind juice,salt,and turmeric powder.let it boil for 2 min.
  3. Then add grounded paste ,and little water and cook for -3 mns.
  4. Check salt and spice ,u can add red chilly powder if u need.
  5. Adjust water for thickness.
  6. Ready to serve with hot rice.




Note: If u felt very Spicy add some drops of gingelly oil to rice and have.



Semiya Upma/Vermicelli Upma

                                 


Ingredients:


  1. Semiya/Vermicelli-1 cup
  2. Vegetable-1/2 cup (carrot,beans,peas)
  3. Onion-1/2 cup (Chopped (R) Stripped)
  4. Green Chilly-2 (Slitted)
  5. Ginger-few finely chopped
  6. Lemon juice-1 tablespoon
  7. Curry leaves/Cilantro-few
  8. Mustard-1 teaspoon
  9. Channa dal-1 teaspoon
  10. Oil
  11. Salt-to taste
Method:


  1. Roast the Semiya/Vermicelli in 1 teaspoon of oil.and keep aside.
  2. Heat a separate pan with 2 cups water.Bring to boil add some salt and oil.
  3. Put all Semiya in to boiling water cook till all gets soft not Mushy.
  4. Then Drain all the water,again soak in to cool water for 2-3 min.Drain it.
  5. Heat 2 teaspoon of oil in Kadai,splutter Mustard,roast the chana dal,green chilly,Ginger & curry leaves.
  6. Add onions and fry till get transparent.Add the vegetables and cook till gets soft.(don't put water)close the lid and cook.
  7. Once all ready add drained Semiya,lemon juice &salt mix well.
  8. Garnish with cilantro.Reserve hot with (R) with out chutney.



Note: U can use tomato instead of lemon juice.
