Eggless Chocolate Brownies



Today's recipe is gonna be a kids favorite ,Awesome Eggless Chocolate Brownies! This Brownie can be make in no time...Ice creams n Brownies are best combo ever!! 

Dry Ingredients:
All purpose Flour- 1/2 cup
Coco Powder-1/2 cup
Baking Powder-1/2 teaspoon
Baking Soda-1/4 teaspoon
Salt- pinch
Sugar - 2 tablespoon

Wet Ingredients:
Butter - 1/2 cup room temperature
Condensed Milk- 1 can (10 oz can)
Thick Yogurt/Sour Cream-  2 table spoon
Vanilla essence - 1/2 teaspoon
Walnuts - 1/2 cup chopped
Hot Water-  1/2 cup
Instant Coffee Powder - 1 tablespoon



Method:
  • Preheat Oven at 350F. Greased a square pan, with some butter/oil, keep aside.
  • Take hot water in a cup, add instant coffee powder. Mix well and keep aside.
  • In wider bowl , sieve all dry ingredients ,one by one.
  • In another bowl , take the butter ,condensed milk, yogurt, Vanilla mix well in blender for one min.
  • Slowly add in the dry flour and blend it.
  • Now, add half of the coffee water ,blend it. Then pour the remaining ,blend it well again.
  • If you adding Nuts, add it now and mix it very gently with wooden spoon/spatula.
  • Pour the prepared brownie mixture in greased pan. Bake it, for 35 min or until bakes.
  • Take out from the Oven ,allow to cool down for 15 min. Slice in to small ,small squares. Carefully take out from the baking try. Arrange it in plate.Dust with some icing sugar(Optional).
  • Now , mouth melting Eggless Chocolate Brownies are ready to Enjoy!


Tips:
  • If you adding nuts, it can be Almond, Cashews or mixed nuts.
  • Adding sugar  helps to control the over pouring of Coco. So don't skip it.
  • If you don't want/don't like coffee flavor ,add hot water alone. Skip the coffee powder.
  • After its cool completely ,store in airtight box. Can keep it in fridge for up to a four ,five days. Bring to room temperature before serving.

Capsicum Corn Sandwich



Hi friends, hope you all had a great festive days! I made little Pooja for Vijayadashami..., was remembering my childhood days, how me n my sis were doing cleaning,arranging books....etc., lovely days with mom n dad :) Second week of Blogging Marathon #21 , under the theme Sandwiches and Wraps. Usually  we wont have Sandwiches oftenly. Very rarely i'll make some...my kid love to have bread butter jam, so simply i'll make that.I tried this from  Tarla dalal.com. Actual recipe says to add mayonnaise instead of white sauce, i don't have that so i made the sauce.

Carrot and Cashewnut Payasam


Another Day for Blogging Marathon ,for the Week 4. For the Second week I have chosen the theme ,  "Indian Sweets -Payasam/Halwa " . In Function or any Occasions   South Indian Meals will ends up with Payasam only.Actualy I does only common Payasam like Semiya Paysam,Parupu Payasam  … For BM ,am experimenting  some more flavorful Payasam from some well known site. This one I got it from “Tarlaldalal” .I posted Carrot Paysam Earlier, but adding cashew paste’s gives excellent taste.Do try it out and enjoy, Healthy Treat for Kids and us as well.Let go to recipes now,

Mushroom &Spinach Pasta(Kids Special)

Very Simple and healthy dish to little ones... :)Can use any vegetables as  your kids like.
Ingredients:
  1. Pasta-1 cup(Cooked)
  2. Mushroom-10 to 15
  3. Spinach-2cups
  4. Soy milk /Whole  milk-1/4 cup
  5. Butter/Olive oil-1 tablespoon
  6. Garlic-2 nos(chopped)
  7. Pepper powder&Salt-to taste
  8. Cheese -Little 
Cut the mushrooms in to bite size pieces.Wash & chop the spinach.

Method:
  1. Heat butter in pan,add garlic and roast for few sec.,
  2. Then directly add mushroom & spinach.
  3. Add bit salt,don't close the lid.Mushroom & spinach  will lose  water so,it'll cook soon.
  4. Once mushroom came tender,add cooked pasta,give a nice mix.
  5. Add salt and pepper.
  6. Pour milk,& cook till get evaporates .
  7. Take some Pasta in plate put some cheese on top and serve.

Healthy Oats Dosa/Dosai

Take a small amount of Oats,make a powder in blender and store it.This way will make dosa easily when we want.Kids will like it.
Ingredients:


  1. Powdered Oats-1 cup
  2. Rava/Sooji-1/4 cup 
  3. Rice Flour-1/4 cup
  4. Jeera-1 teaspoon
  5. Ginger- few (chopped)
  6. Green Chilly/Cilantro-Few (chopped)
  7. Salt
  8. Oil
Method:


  1. Mix all Ingredients together in a bowl except oil.with adding water.
  2. Rest it for 15 min.
  3. After,check the batter and add enough water and bring to dosa batter consistency.
  4. Heat dosa Pan,and make  small dosa with little oil all around.
  5. For crispy dosa close lid and cook.
  6. Ready to Serve with Any chutney.
I served with Carrot Chutney.My Kid liked a lot :)....

Kadala Urundai/Peanut Jaggery Balls


One of my favorite Dish (R) Snack from childhood.In India we'll get this kadalai Urundai in small,small kadai(shop).I tried, it came out really good,that what we get in shops.Very healthy snacks for kids(for us also :) )
Ingredients:

  1. Kadalai/Ground Nut/Peanut-1 cup
  2. jaggery-3/4 cup (Powdered)
  3. Salt-pinch(Optional)
  4. Cardamom powder-little
  5. Dry ginger Powder(Sukku podi)-1/2teaspoon
Method:

  1. Dry roast the Kadalai/peanuts in any vessel,Let it cool down for 10-15 min

                                    

2.After that rub the kadalai/Peanuts in both the hands.,i.e.,remove the skin part.
3.Using a wider low weight Plate(like Muram) separate skin and Nuts(Kadali)

                                        
4.Now grind the nut in mixer.Coarse grind.Dont grind in to powder form.
                                        
5.After that heat 1/2 cup of water in pan and jaggery.Jaggery have to dissolve in water.Add cardamom &dry ginger powder(sukku podi)
     6.Make  a thick syrup.Cook in medium flame. 
                   Take 1  glass of water and drop little bit of syrup,in to it.,make a small ball,if u made a ball means the consistency's perfect.U couldn't make ball means ,still syrup have to cook for 1-2 mns.


                                       
               7. Once u got perfect Consistency,switch of the flame and mix grounded Kadalai/Peanut Powder and mix well.
                 8..Mixture will be hot only,wait for 1 min and make a small,small balls in hand.


                                       


     9.Let it cool down for 15 min,after that ready to eat.
                    

Note: If u waited more than a 1 min to make balls, the mixture turns fast in to powder form,then it'll be harder to mold a shape.

Vegetable Dosai/Dosai Veggie Roll







This's  a stuffed dosai,First have to make stuffing.For kids,you can add some panner also.Simple.,home made Fast Food.Everyone will like it.You can fold like regular Masala doasi., also..simply i rolled it.


Ingredients for stuffing:
  1. Carrot-1 (shredded)
  2. Capsicum-1/2 cup chopped
  3. Cabbage-1/2 cup chopped
  4. Salt/chilly powder-to taste.
  5. Oil-1teapoon
  6. Cilantro-few chopped
For Dosi(base)
  1. 3 cup dosi batter.
  2. Oil

Method:
  1. Heat 1 teaspoon of oil in pan,add all vegetables,
  2. Add salt and chilly powder.,mix well
  3. Cook it for  2min.,don't over cook the veggies.
  4. Finally add chopped cilantro,transfer in to bowl.

                                  
   3.Now.,heat dosai pan pour, one small ladle and make small dosai,put oil around.

                                  
4.Close the lid for 30sec.,after that open the lid,take a table spoon of mixture ,keep in corner of dosai & Roll it carefully.

                                  



To impress kids,just cut the dosai to diamond shape.,No need for side dish.For parties also,we can keep it for starters....

Broccoli Fry/Broccoli Varuval

For my kid.,i started doing this recipe,now we all started to have this broccoli fry.This fry will go well with rasam satham.U can do the same recipe with Cauliflower also.
Ingredients:
  1. Brocolli-2 cup cut in to lenth wise
  2. Salt/Pepper-to taste
  3. Jeera-1teaspoon
  4. Turmeric powder-pinch
  5. Oil-2teaspoon
Method:
  • Heat pan,add jeera and roast.
  • Now add Brocoli(R)Cauliflower 
  • Add salt,turmeric powder,Pepper powdermix well and close the lid.
  • No need to add water., it's like steam cook only.
  • Once in a while give a mix and cover., do still Broccoli turns soft.Don't over cook the vegetable.
  • That's it ready to serve with rice.

Carrot kheer/Carrot Payasam

This's very simple recipe., Kids will like to eat a colorful Kheer.,I learned from my grandma.,She used to mix some rose essence in this.,i didnt have that one so i used cardamom powder.I'll prefer to have when it's cold and chill.
Ingredients:


  1. Carrot-2
  2. Milk-1cup
  3. Sugar-1/4 cup
  4. Salt-pinch
  5. Cardamompowder-1 pinch
  6. Ghee-1teapoon
  7. Cashew,almonds-few
Method:


  • Peel the carrot and cut the edges.and cut the carrots in to small.,small pieces 
  • Pressure cook the carrots with 1/4 th cup of water.just 3 whistle is fine.
  • Once it cool down,open the lid and blend in blender.
  • Boil 1 cup of milk in pan., add sugar,salt and give a mix 
  • Now slowly add grounded Carrot mixture and cook for 2 mns.add cardamom powder.
  • Fry dry fruits in ghee and add on top.
  • Serve Hot or cold.
                                      

Pan Cakes

Yum..Yum..pancakes for Morning Break fast it's always special for our family.I tried home style... home made pan cakes., really came out nice.,so wanna share the recipe.


Ingredients:


  1. Maida-1cup
  2. Curd-1cup
  3. Egg -1 nos
  4. Salt-pinch
  5. Butter-1table spoon
  6. Sugar-1teaspoon
  7. Cooking soda-1/2teaspoon
  8. Baking soda-1/2 teaspoon
  9. Milk
Method:


  • Mix all dry ingredients one-by-one.and keep aside.
  • Break egg in wider bowl and beat well with fork.
  • Add curd ,butter beat well.
  • Now add all dry ingredients slowly .,mix it well
  • Add required milk.,Don't make a lumps.
  • Make  like dosai batter.Rest it for 30mns.
  • Heat a pan .,mix well with spoon  and make small small pan cakes no need to add oil or butter.
  • Serve with Honey or maple syrup.
U can add 1/2 teaspoon of vanilla flavor also to this mixture and make pan cake.

Vegetable Omelette

Ingredients:
  1. Egg-2 nos
  2. Mushroom/Spinach/Bell Pepper(capsicum)-1cup sliced
  3. Salt
  4. Red chilly powder-1teaspoon
  5. Black pepper powder-1teaspoon
  6. Cheese-Little to sprinkle
  7. Olive oil (or)Butter-1teaspoon
Red chilly powder will not mix properly, when we add directly. so mix with little bit of water and add.
Mix red chilly powder,pepper powder,salt in water keep aside.

Method:


  • Break Eggs in bowl,add above mixture
  • Beat well with fork,add all slice vegetables and give a mix.
  • Mean while heat  tava/pan ,Pour the egg mixture put oil arround and make a omelette.
  • Add cheese on top.,and serve with toasted bread.

Vegetable Idlis

With Carrot& Beans Mixture(Poriyal).,i did vegetable idlies.It's very simple recipe.,Carrot-beans Mixture recipe follows.,



Ingredients:
  1. Idli batter-2cup
  2. Onion-3tables spoon(optional)
  3. Carrot- beans-1/2cup chopped
  4. Salt/Red chilly powder/Turmeric
  5. Mustard/channa dal-1/2teaspoon
  6. Cilantro/Curry leaves-few
  7. Oil-1teaspoon
Method:
  • Heat oil in the pan.splutter mustard, channa dal.
  • Fry onions,curry leaves.
  • Now add cilantro and vegetables.,close the lid.let it cook for few mns.In between give a mix..
  • Add red chilli powder,turmeric powder.No need to add water.
  • Once the vegetable cooked.,it's all done.
  • Mix with idli batter and make a soft idlies.
  • Can serve with any chutney and sambar.
With same recipe will Make Vegetable.,paniyaram too...You can cook the vegetable in microwave also., Can add Cabbage,green peas to make this Mixture(poriyal).Kids will love to eat this color full idlis.
Note:
Don't add salt in veg mixture(poriyal),in batter itself will have enough salt.Avoid green chillies,while eating it's hard to find.

Potato-Cheese Cutlet-kids special



Deep fried Cutlets
Ingredients:


  1. Potato-2 boiled
  2. Peas-1/2cup boiled
  3. Cheese-2table spoon
  4. Red chilly powder/salt-To taste.
  5. Rusk-1/2 cup
Maida mixer: Take 3 table spoon of maida mix well with water.


Method:


  •   Mash potato in bowl.add Peas,chilly powder,cheese,salt,cilantro mix well.
  • Make in to desired shape.Dip in to maida mixer and roll in bread rusk,deep fry it.
  • Ready to serve.


Pan fried


I tried some cutlets in pan fry.with out dipping and rolling.

Idly Fingers-Kids special

Ingredients:
  1. Idly-3nos
  2. Egg-1
  3. Salt/Chilly powder-to taste
  4. oil-2teaspoon
With left over idlies we can do this recipe.No need to deep fry.
Method:

  • Break egg in a bowl,add salt &chilly powder beat well,with fork.
  • Cut the idly in lengthwise.
  • Dip idly in egg mixer,heat oil in pan,shallow fry it.
  • Serve with tomato ketchup ,add pepper on top.(optional)

Egg Cheese Dosai-Kids special








Ingredients:
  1. Dosai batter-1 cup
  2. Egg-1
  3. cheese-3 table spoon
  4. salt and pepper-to taste


Method:
  • Heat dosai pan.Now make a medium size dosai put oil all around.
  • Break one egg on the dosai and spread over., (Use fork to spread)
  • Let it be for 4mns then flip the dosai.Let it be for 3 mns.
  • Now turn the dosai again, now put cheese and spread over it on dosai,add salt and pepper to taste then close the lid for couple of mns.
  • Serve hot with Tomato chutney.
