Soya Chunks Pulao






Hi Everyone ,hope u all doing great.Me too :) Time for Blog hop!!Event started by radhika of "Tickling Palates" .This week i paired with Neetu's "Hobby Chef".From her blog i took Protien rich Pulao recipe.You can add any other desired vegetables to this pulao.
Ingredients:


  1. Rice- 1 cups ( i used seeraga samba)
  2. Soya Chunks-3/4 cup
  3. Onion - 1 medium (Sliced)
  4. Tomato- 1 small (Chopped)
  5. Capsicum - half (Sliced)
  6. Green chilly-2 
  7. Red chilly powder- to taste 
  8. Tumeric powder-little
  9. Ginger garlic paste
  10. Cilantro
To Temper:
  1. Whole gram masala
  2. Cumin seeds-1/2 teaspoon
Method:
  • Soak rice for 15 to 30 mins.
  • Prepare soya chunks and chop ,in to small bite pieces.
  • Heat the pressure cooker,add ghee splutter whole garam masala & cumin seeds.
  • Add ginger garlic paste,fry  for 1 mins.
  • Then add onion & capsicum fry again for 2 mins.
  • Now add the chopped tomato and fry for 3-4 mins in medium heat,once it started losing oil add the dry powders,(Turmeric & Red chilly powder)
  • Put salt also.
  • Add the soya chunks mix well.
  • Now add required water to the rice ,put some chopped cilantro on the top.
  • Now close the lid and pressure cook it.
  • Once the whistle completely cool  downs,open the lid and  mix gently.
  • Serve hot with any vegetable kurma/Raitha...

Costa Rica ~ Gallo Pinto

Am posting this recipe for "Saji's" Blogoversary giveaway.This's really a healthy and fulfilling dish.Off course a quick recipe.






 Ingredients:
  1. Onion- 1 medium (Chopped)
  2. Green bell pepper-1 (Sliced in to small)
  3. Black beans- 1 cup
  4. Cooked rice- 3 cups
  5. Garlic-2 nos (minced)
  6. Cumin powder- 1 teaspoon
  7. Coriander powder- 1 teaspoon
  8. Salt/Pepper- To taste
  9. Cilantro - some
Soak black beans for 8 hours.Before cooking drain all water,add new water & pressure cook it.Add salt to it.

Method:
  1. Heat oil in the pan,add onion & garlic for 2 min till gets soft & color changes.
  2. Add the capsicum,fry it for one min.
  3. Now add the masala powders,Cumin and Coriander mix well.
  4. Put black beans and rice,mix well.
  5. Add salt and pepper to taste ,again give a gentle mix.
  6. Garnish with cilantro ,now ready to go..

SAJI

Kothu Chappathi/Fried chappathi with Vegetables



Quick recipe with left over chappathies.




 Ingredients:

  1. Chappathi - 10 nos (Medium size)
  2. Onion- 1 (Stripped)
  3. Tomato-1 (Chopped)
  4. Carrot-1 nos 
  5. Beans- 10 
  6. Cabbage- 1/4 cup
  7. Cumin powder/Coriander powder-1 teaspoon
  8. Red chilly powder- to taste
  9. Ginger garlic paste- 1teaspoon
  10. Green chillies-2 nos (Chopped)
  11. Cilantro- 1/4 cup (chopped)
  12. Lemon juice- 2 teaspoon
  13. Shredded Coconut - 2teaspoon
  14. Salt-To taste
  15. Turmeric powder
To temper:
  1. Oil- 2 teaspoon
  2. Mustard-1 teaspoon
  3. Curry leaves-few
  • Strip all vegetables and keep aside.
  • Also stripe the chappthi in bite size pieces.
Method:
  1. Heat oil in pan,splutter mustard and curry leaves.
  2. Add ginger garlic paste ,green chilly fry for a while.
  3. Put onion fry till get's soft,
  4. Then now add tomatos ,add turmeric powder,cumin powder,coriander powder ,red chilly powder and salt fry till all get in to mushy.
  5. Add all stripped vegetables stir it and close the lid and cook it for 2-3 mins.
  6. Firm cook the vegetables.[don't cook soft]
  7. Once the vegetables done with cooking ,add the stripped chappthies mix well.
  8. Coat the chappthi with masala.
  9. Squeeze lemon juice,give it a mix.
  10. Add shredded coconut mix again.
  11. Finally add cilantro ,mix and serve hot.
Note:
  • Kothu chappathi can be severed in Tea time snack (or) main dish.

Soya Masala Kurma



Ingredients:


  • Soya Chunks- 1 cup (Chopped in to little pieces)
  • Peas-1/2 cup
  • Onion-2(Chopped)
  • Tomato-3(Chopped)
  • Cilantro/Curry leaves-Few
  • Oil
  • Water
To temper:
  1. Cinnamon-1 small stick
  2. Cloves-2
To Grind:
  1. Coconut- 1/4 cup
  2. Fennel seeds- 1/2 teaspoon
  3. Ginger & garlic- few
  4. Cashew nuts-5
  5. Coriander powder-2 teaspoon
  6. Chilly powder- 2 teaspoon


  • Heat water in a pan,bring to boil.Now add the soya chunks and close the lid for 5 to 10 mins.
  • Then drain all water,rinse the soya chunks in cold water.
  • Squeeze well ,and rinse.
  • Repeat the process till raw smell goes from it.
  • Finally squeeze and keep aside.
  • Cut in to small bite pieces.
Method for Soya Kurma:
  1. Heat oil in pan,splutter Cinnamon and cloves.
  2. Add onion and fry till its color change
  3. Add the tomato next to it.Fry for 2 more mins.
  4. Put the green peas,add little water and close the lid.Cook it for 2 to 3 mins.
  5. Then add ,soya chunks mix well.
  6. Add the ground paste and required water,close the lid again.
  7. Check salt.Cook it in medium flame for 5 mins.
  8. Once it done add cilantro and curry leaves on top.
  9. Serve hot with Idly/Dodai ..
 Note:


  1. Can add any desired vegetable to the kurma.
  2. Instead of adding chopped soya chunks you can grind in to course and add to the curry.
  3. Serve with any type of tiffin (or) Rice items.

Paneer & Mushroom Gravy





Usually i grind onion tomato separately or together for making any north indian Curry/Gravy.But in this recipe i didn't use any onion or  tomato paste,for a change :) !!
Ingredients:
  1. Mushroom- 2 cups (Chopped)
  2. Paneer- 200 grams ( Cubed)
  3. Onion- 1 medium size (finely chopped)
  4. Tomato-2 medium size(finely chopped)
  5. Green chilly-2 (Slit)
  6. Ginger garlic paste-1 table spoon
  7. Cumin powder/Jeera powder-2 teaspoon
  8. Coriander powder- 1 teaspoon 
  9. Turmeric powder-little
  10. Red  chilly powder/Salt- To taste
  11. Kasoori methi- 2 teaspoon
  12. Oil+Ghee- 2 teaspoon
  13. Water- As required
Tempering:
  1. Cinnamon-small stick 
  2. Cloves-2
  3. Bay leaves-1 

To Grind:
  1. Cashew nuts- 5 nos
  2. Badam-8 nos
  3. Poppy seeds/Kas kas-1 tablespoon
Soak this in hot water for 15 mins and grind it  with little water.


Method:
  • Heat oil+ghee in pan,splutter whole gram masala one by one.
  • Add green chilly,
  • Add ginger garlic paste saute well.
  • Now add onions, saute it for 2 mins or till change in color.
  • Then put tomato and fry till it goes mushy.
  • Now add the dry powders ,fry for 1 min [cumin powder,coriander powder,chilly power,turmeric powder] 
  • Add mushroom , saute it well for 1 min.
  • Pour little water,once water is boling add the ground paste.
  • Mix well ,close the lid and cook for 2-3 mins.
  • Put the paneer in to the gravy.Bring to boil for couple of mins.
  • Then add the kasoori methi on top,
  • Add sour cream and mix.[Optional]
  • Add cilantro and serve with Pulka roti,Naan,chappathi,rice etc.,

Low Calorie Broccoli & Tofu Bonda




 After diwali am posting  my first entry for Blog hop wednesday~Edition 2.Hope all of u enjoyed Diwali with friends and relatives :)Now coming to blog hop,Radhika's doing a great job,now she introduced new friends to us.Really interesting, thank u  radhika :). This week i paired with Vardhini of   "Zesty Palette"  .She's having a wonderful blog with various cuisine.Totally i confused what to cook!! Am not a tofu lover ,but i love low calorie foods.So suddenly i selected to cook,Low calorie healthy bonda. When I visit some other blogs, I wonder how this bondas would taste, but it is awesome!!Let's see the recipe now,
 
Ingredients:

  1. Firm tofu-1/2 pack
  2. Broccoli-2 cups(Finally chopped)
  3. Green chilly -2 (Finally chopped)
  4. Red chilly powder/Salt-to taste
  5. Corinader powder-1/2 teaspoon
  6. Cumin seeds-1/2 teaspoon
  7. Turmeric powder-little
For batter:
Ingredients:
  1. Besan flour-1/2 cup
  2. Rice flour-1/4 cup
  3. Chilly powder/Salt-to taste
Method:
  • Remove out the  tofu from the pack.Take out all excess water.
  • Place tofu on a plate and cover with one more plate and keep some weight on top and allow to drain all water for 30mins.
  • After that,Scramble it with hands. 
  • Chop the broccoli very finely.
  • Now take a wider bowl,add all ingredients one by one and mix well.
  • Make a small dumplings ,keep aside.
  • Now dumplings are ready.
  • For batter,take a bowl again,mix all ingredients and add little water for consistency.
  • Make a semi thick batter.Batter shouldn't be very thin.
  • Heat paniyaram pan,add little oil in it.Let oil get heat.
  • Then,take one dumpling ,dip in to gram flour batter and place in paniyaram pan.


  • Repeat the same for all dumplings,Close with the lid.
  • After 1 min open the lid and flip the bondas with spoon Or tooth pick.
  • Flip and cook,for 2-3 mins till all side gets golden color.
  • If you like drop very little oil on top of each bondas before taking out.
  • That's it,Hot and healthy bondas are ready to have :)
  • Serve it with some spicy chutney or sauce.
