Eggless Sponge Cake /Basic Sponge Cake



Happy New Year to all my viewers and Friends. This's my first post for the year. Hope i'll not disappoint you guys,sure will come with my recipes.Am glad to being part SpicyTreats Love2bake. Its a weekly event. Every Monday am going to share my baking attempts. Baking cake is very simple, less mess and less ingredients. Once you mix all wet and dry ingredients together, the cake batter will be ready. Then have to bake the in right temperature without burning. That's it your cake will be ready!!


Today am sharing a Egg less Sponge Cake, using condensed milk. This cake turned out very light,  spongy  and moist. Do try it out. Sure this cake will not disappoint you!! Recipe Follows,



Ingredients:
All Purpose Flour/Maida -1 cup
Condensed Milk -1 cups
Butter -1/2 cup/1 stick room temperature
Milk- 1/3 cup
Baking Soda- 1/2  teaspoon
Baking Powder- 1/2 teaspoon
Vanilla Essence -1/2 teaspoon

Method:
Preheat oven to 350 degree. Grease the cake pan with butter and maida. Keep it aside.


Sieve maida, baking powder and baking soda.


In a wider bowl take butter and condensed milk. Beat it for 1 min in medium speed.Add the vanilla essence ,beat again. 

                    

Add the flour mixture slowly, beat it again for one more min. The batter will be thick.

                    

Now add milk, blend it well. Mixture will get moisture now.

                    

Pour the Cake mixture in ,greased it. Tap it well. Bake it for 40 to 50 mins. Keep checking ,to avoid burning.

                       

Take out the cake, check its cooked or not  with a tooth pick. Tooth pick has to come out cleanly without sticking any batter. Otherwise you have to bake 10 mins again.

            

Rest the cake for 15 mins it the cake pan. After the cake turns little warm, transfer to a plate. 

                         

Cut the cake in to wedges/any shapes.Once it cools completely ,can store this fridge for one week.

Another Interesting Recipe for Blog Hop Wesnesday,this Month i paried with Anamika of "Taste Junction".She's having Nice Space with unique recipes!!I selected Cake ,am a big Cake Lover :) This's a simple cake recipe,serve with Cup of Tea for Evening Snack!!I adjusted sugar to my taste,can reduce it for your taste.I didn't use nuts.

Zebra Cake

 Baking Zebra cake,is my long time wish.I loved the texture of this cake...Same time i'll feel this's harder for me to make,because need more patience right!!Some how i simply tried today,result was good!!Actually i enjoyed, while filling  the tray with two color batter!!Recipe's from Aarthi's "Yummy Tummy".

Featherlite Cake









Featherlite Cake,Exspecially for "Ticling Palates" Radhika's Blog hop Wednesday.Now it enter in to Second  week.I have been paired with Shireen of "Ruchil Randhap-Delicious Cooking".She's having a very beautiful blog with many baking recipes.I like to bake,i selected to make a Simple(only few steps) Cake.




Ingredients:


  1. All purpose flour/Maida-2 cups
  2. Sugar-1 cup
  3. Butter-1 cup
  4. Egg-3
  5. Milk-1cup 
  6. Baking Powder-3/4 teaspoon
  7. Vanilla essence-1 teaspoon
  • Method is very simple,Separate the egg yolks from the egg white.
  • Bring the butter to room temperature(Soft).
  • Boil the milk & cool it.
  • Sieve Maida and Baking powder for 2-3 times and keep aside.
Method:
  1. Preheat the Oven to 350 F.Grease the Cake tray with little butter and all-purpose flour.
  2. Take a wider bowl,beat butter & sugar for 3-4 mins in medium speed.It'll turn fluffy.
  3. Add the egg white first in to mixture,beat well.
  4. Add the egg yolks and beat it for 2 more mins in low flame.Pour the vanilla essence.
  5. Now,add the flour & milk alternately,fold the mixture.(Do not bled (R) mix in hand)
  6. Then,transfer in to greased pan
  7. Bake it  for almost 35-45 mins.
  8. After then,let't cool down  for 30mins & cut and enjoy.

Coffee Cake/Tea time Snack

Simple Cake recipe, can be serve in Evening with Coffee (R) Tea..Can add tutti frutti also in cake mixture.


Ingredients:

  1. All Purpose Flour-2 cups
  2. Baking Powder-3 teaspoon
  3. Salt-1/2 teaspoon
  4. Sugar-1/2 cup(Increase sweetness as u like)
  5. Egg-1 
  6. Milk-1/2 cup
  7. Oil-1/3 cup
  8. Vanilla-1 teaspoon(Optional)
Method:
  1. Pre heat oven to 360 F .Grease 9" round (R)Square pan.
  2. Take a bowl,add egg beat well.
  3. Add milk,oil and vanilla beat well again.
  4. Mix All purpose flour and baking soda together.Add little by little in to egg mixture.
  5. Beat again for 2 min.
  6. Then pour the mixture in to greased pan,and bake it for 25-30 mins (R)Until done.
  7. After that allow to  cool for 15 min,then transfer in to plate,cut in to Pieces.

Eggless Curd Cake

This's simple cake recipe,For this you no need a cake blender just our Mixer(Mixee) is fine.If u had Cake blender use that.
Ingredients:


  1. Maida/All purpose flour-1 3/4 cup
  2. Curd-1 cup
  3. Oil-3/4 cup
  4. Sugar-1 cup
  5. Cooking soda-1/2 teaspoon
  6. Coco powder-8 teaspoon
  7. Milk-2 table spoon
  8. Vanilla essence-1 teaspoon
  9. Coffee Powder-1/2 teaspoon (optional)
Method:


  1. Preheat the oven in to 350 degrees F.Grease a 9" pan with butter (R)ghee.

2.Sieve all dry ingredients first (i.e., Maida,cooking soda,coco powder and coffee powder) and keep aside.  

3.Take mixer ,add curd,oil,and sugar and blend it till all  dissolved.

4.Now add little by little of Sieved Mixture (Maida,soda,coco,coffee).blend it for 2-3 min.

5.Now add vanilla essence and milk..finelly beld it for 2-3 min.

6.Transfer all the mixture to greased Pan.Tap it.             

                   
7.Now keep in to Oven and Bake it for 35-40 min.,
8.After that take out,and let it get cool around 30min.,and cut it.


                     



    Insert a thin knife (R) tooth pick in center of the cake to check whether  it baked are not.Like how we check Idlies...If u got a batter in your knife,cake have to bake still more min.So,adjust the time how your cake is Baking.First set the time for 25 min and then add 5 min.


Note: If u want,you  can add some chopped nuts(Almonds,cashew) in cake mixture and bake it.
