Onion Kara Chutney/Spicy Onion Dip(Chutney)




Hi Friends hope you all had a great weekend!!Now time to BM,for the fourth week of Blogging Marathon #20,i selected the theme Cooking with Onion.With out Onion..my cooking will not be complete...guess many of yours!!I know...atleast we use one onion in our day to day cooking!!Onion takes a major part in all type of Rice,Curry/Subzi n Poriyal.For three days,i will be sharing recipe which i used onion as major  in my dish.Today's recipe's Chettinad's very famous Kara Chutney,got the recipe from TV show.This chutney can be make it in two type,one's blending all ingredients together with out no cooking,n tempering.Second one's sauteing all the things n blending n goes tempering on it..Now to the second type chutney,

Capsicum Chutney and Roasted Badams

This's our first Blog Hop Wednesday of 2012.Last time i missed to post my partners recipe,due to Holiday season.So,here am posting this month blog hop recipe and last month recipe!!I  have been paired with Jabeen of "Janeen's Corner"..She's one of my good friend...We know each other when we were in Phoenix!!I tried Capsicum chutney from her blog.I wanted to know how would be the taste.Taste was really good..My kid liked a lot :) So,you too try this and enjoy!!





Ingredients:

  1. Red Capsicum- 1 nos
  2. Onion-1 nos
  3. Green chilly-1 nos
  4. Red chilly-2-3 
  5. Urad dal-2 teaspoon 
  6. Coriander leaves 
  7. Salt
  8. Oil
To Temper:
  1. Mustard seeds-1/2 teaspoon
  2. Channa dal- 1/2 teaspoon
  3. Urad dal- 1 teaspoon
  4. Curry leaves
Method:
  • Heat oil in a pan,add and fry the channa dal and urad dal till gets golden color.
  • Add green chilly and red chilly ,and fry.
  • Then add onions and capsicum ,fry till gets soft.
  • Add Cilantro in to it.
  • Allow to cool,then blend in to a fine paste.
  • Then do seasoning with,mustard ,channa dal,urad dal and curry leaves...
  • Serve with Idli/Dosai!!


For this month i paired with Kokila of "Foodies Nest".From her blog i took a very simple and healthy dish.Almonds are good for health right..Generally we use to take some soaked almonds in empty stomach, after removing their skin..My kid eat Almonds in that form only!!When i saw the recipe,i just wanna to try for my kid..we all liked it!! The taste similar to roasted peanuts only..


Ingredients:
  1. Almonds/Badam- 1 cup
  2. Olive oil-1/2 teaspoon 
  3. Pepper and salt -to taste
Method:
  • Heat the pan,add oil.
  • Then add the Badams and fry in medium flame,roast till get golden color.
  • After that put,salt and pepper to taste,mix it.
  • Transfer in to Kitchen towel,allow it to cool for 5 to 10 mins,
  • That's it,crunchy Roasted Badam's ready to munch!!
Note:
  • After roasting i transfered the nuts in to kitchen towel,to avoid excess oil.This's totaly optional,you can enjoy with little oily .

Cilantro Chutney/Kothamali chutney

Ingredient:

  1. Cilantro-1/2 bunch 
  2. Onion-1 medium chopped
  3. Tomato-1chopped
  4. Ginger-1/2 inch 
  5. Garlic-2 peeled
  6. Tamarind  -small bit
  7. Red chilly or green chilly  -2
  8. Coconut-1/4 cup shredded
  9. Channa dal/Urad dal-1teaspoon each
  10. Turmeric/salt-as needed
  11. Oil-2teaspoon
Cut the root part alone from cilantro,can use the steam aslo.Clean well in running water.cut and keep aside.
Method:

  1. Heat oil in a pan roast channa dal,urad dal,red chilly,ginger and garlic
  2. Add chopped onion,curryleaves fry till turns soft
  3. Add tomato,fry till raw smell goes.
  4. Put salt,turmeric powder,tamarind  mix well.
  5. Finally add cilantro leaves,and coconut give it a mix and turn off the stove.no need to cook.
  6. Let it be cool,after that blend with little water.Blend in to very fine chutney.
  7. Transfer in to bowl.ready to serve.
You can use tamarind  juice instead of fresh. Can season this chutney with mustard seeds,channa dal and curry leaves.it'll tastes good.It can be serve with Idli,Dosai,adai etc.,

Tomato chutney

Ingredients:

  • Tomato-3 chopped
  • Onion-1 small chopped
  • Channa dal/urad dal-1teaspoon each
  • Ginger-half inch
  • Red chilly-2 nos
  • Coconut-1/4 cup (shredded)
  • Salt/Turmeric powder
  • Oil-3teaspoon
Seasoning:

  1. Mustard seeds-1teaspoon
  2. Channa dal-1/2teaspoon
  3. Curry leaves-few
Method:

  1. Heat a kadai with 2teaspoon of oil.roast channa dal,urad dal,ginger&red chilly
  2. Once it's get's golden color,add onion and fry till it's gets transparent
  3. Now add Tomato,saute well,in this put salt and turmeric powder.
  4. Let it cook for 3 mns.
  5. Now add coconut dont fry just give a mix and turn off the stove.
  6. After the mixer gets cool down,grind it in blender with adding enough water.
  7. Transfer in to bowl.
  8. Now a heat 1teaspoon oil for seasoning,splutter mustard,channa dal,and curry leaves.
  9. Pour on top of chutney add mix well with the spoon.
  10. Garnish with cilantro(optional),can be serve with Idli,Dosai,Chapathi,adai dosai...etc.,
