Pal Payasam~My First Blog Anniversary




 Hi friends,it's my pleasure to express my happy feelings that i have achieved one year milestone in my blog.YAHOOO!! I learnt cooking  from the past three years only (after coming U.S). From my school days i was(even now) crazy in collecting recipes,that lead to think innovative in cooking and sharing recipes to all of you!! I wish to take this blog in long term success and helpful for viewers like you. Still i feel learning never ends and i'm learning from other bloggers as well.

  1. All purpose flour- 1 cup
  2. Fine rava- 1/2 cup
  3. Oil-2 tablespoon
  4. Water-1/2 cup

Jangiri

   


My kid love Jangiri /Jilabi a lot.For him i tried,very first time it was Flop :( It was too oily. Not even in a proper shape.But he enjoyed :) .This time i want to give him a better Jangiri.. so,i checked so many "youtube" videos to get proper Shape & exact Jangiri.In one Video she used cake decorating pastry cone instead of any ziploc covers.Suddenly i thought let's try,i did,then the result was really really gud. You can use a Ziploc cover to get a  shape.


But,if u used Cake Pastry Cone...grind the batter very well.Because while squeezing some unground urad dal  might get struck ,in tip.I faced this problem.











For Jangiri :


Ingredients:

  1. Urad dal- 1 cup
  2. Rice Flour-2 table spoon (Or) Raw- 2 table spoon
  3. Red food color-Some 
For Sugar Syrup:
  1. Sugar - 1 (Or) 1 and half cups
  2. Water- 2 and half cups
  3. Lemon juice- few drops
Method:
  • Soak urad dal in water for Minimum 1 hour.
  • If you adding rice,soak together.
  • After an hour drain all water,grind in Wet grinder adding very little water in a time.
  • If u using rice flour,just grind Urad dal alone,then mix the flour in the batter.
  • Once you done with the batter,take in to a wider bowl,add little "Red food color" mix well, in hand.
  • Beat well again.
  • Now the batter is in form.
  • Heat oil in wider pan,don't use kadai.
  • Transfer the batter in to Pastry Cone (Or) in Ziploc cover,directly squeeze in to the oil.
  • Don't try in hot oil,you wont get proper Jangiri.
  • Fry in medium heat.

  • Don't wait till all get more crisp.Little crisp is fine.
  • Once you fried,transfer in to paper towel.
  • After a min dip in to sugar syrup.Soak it for 2-3 mins,flip-flop it,then transfer in to bowl (Or) Plate.
Method for Sugar Syrup:
                                                                                                              
  • Mix water and sugar in a Wider Kadai,switch on the stove.
  • Bring to boil.
  • Make a half thread consistency.
  • Add few drops of lemon juice.
  • Switch off the stove.
                           
  Note
  • Chilled Jangiri will be more Tastier. 
  •  Store in air tight container.Pour excess ,sugar syrup on Jangiri.
  • Let them soak for whole day then Enjoy.

Butter Badusha

Badusha's very common sweet in every South Indian Home on "Diwali Days".Very mild sweet.If anyone hate to eat more sweets,u must try this and enjoy.Fesitive days should not  run with sweets right.. first time i tried this.It came out really gud,my hubby and kid liked a lot.Recipe adapted from Mallika Badrinath's cook book.







Ingredients:


  1.  All Purpose Flour/Maida-2 cups
  2. Cooking Soda-2 pinch
  3. Kesari  Color-Little                                     
  4. Saffron-Little
  5. Cardamom Powder-Pinch
  6. Butter- 1/2 cup
  7. Oil-To fry
  8. Water-As required
For Sugar Syrup:
  1. Sugar-1  cup
  2. Water- 1 1/2 cup
For Garnishing:

  • Almonds and Coconut (Optional)
Method:
  1. Sieve Maida & Cooking soda,for two times.
  2. Take a wider bowl,put maida.Add Kesari color,Saffron,Cardamom powder and finally put the butter and mix well in hands.
  3. Sprinkle little water at a time and make a soft tight dough.
  4. Make a small,small balls with that.
  5. While making balls,dont allow it get cracks in out sides.
  6. Flat the balls in palm & press a little in a middle,using ur thumb. 
  7. Heat kadai,fry the prepared flatten balls in medium heat.
  8. Fry till Badusha get golden color and crispy in out side.
  9. Then,drain it & transfer  to paper towel.
Method for Sugar Syrup:
  1. Take a wider Kadai,mix water and sugar.
  2. Boil it for 10 mins in medium flame,bring the sugar syrup in to half string Consistency.Use your fingers to check it.
  3. Once the syrup done,switch off the stove and let it cool for just 2 mins.
  4. Then put fried Badusha in to the sugar syrup,flip flop it,dip gently.
  5. Once it coated in all sides,transfer in to plates.
  6. Before Badusha get cool down,put some nuts or Coconut on top.Press a little.
  7. Enjoy :-)

Note:



*I given medium sweetness recipe,you can add 1/2 cup of sugar for more sweetness.Add some rose essence in sugar syrup.Can add  some Colored shredded coconut on top.

Wheat Halwa/Wheat Flour Halwa







Fourth Week of Blog Hop Wednesday ,this week i Paired with Neha of "From my heart", She's having cute blog with very yum recipes.This time i took a simple recipe,which can make easy in 5-10  mins.Very healthy sweet for Kids.I changed her recipe little bit.Lets see the recipe,







Ingredients:
  1. Ghee- 1 cup
  2. Atta Flour/Wheat Flour- 1 cup
  3. Sugar-1 cup
  4. Water-2 cups
  5. Blanched Almonds-8 (Sliced)
  6. Cashew Nuts -5 (Chopped)
*Save some Nuts for final garnishing. 

Method:
  • Take a Non-stick pan/ heavy bottom pan,heat ghee.
  • Add Cashew and Almonds fry till turn golden brown.
  • Add water to it,allow to get hot.
  • Once water started boiling add sugar mix it with the wooden spoon,dissolve it.
  • Then slowly add the Atta Flour to it mix and stir well.
  • Cook for 2-3 mins in low flame.
  • Once raw smell goes  from the Halwa,transfer in to grease plate.Let it cool down for a while,then cut in to desired pieces.
  • Garnish it with chopped Almons/Badams.

Rasgullas (My 100th Post n Awards)

 Yeah Here's  My 100th Post...with full joy!!!Am Glad that i got an Award Shower  at the same Time... I never think i will hit a Century in a Short Period i.e.,100Days.Here i wish to thank all my follower friends & my dear ones...I have achieved this only with your Valuable Comments and feed backs!!!

I checked in many link for this recipe.Rasgulla r Bengal Traditional Sweet.Homemade cheese balls soaked in chilled sugar syrup.This's my first try.. Here you go with a Recipe.,




 Ingredients:


  1. Milk-4cups
  2. Lemon Juice-1/4 cup
  3. All Purpose Flour-1 tablespoon
For Syrup:
  1. Sugar-1 1/2 cup
  2. Water-4 1/2 cup
  3. Crushed Cardamom-1 (Optional)
  4. Saffron-few
Method:
  1. Heat a milk in heavy bottom pan.Once it's started boiling add lemon juice,mix it with a spoon& cook it for few more mins to get curdle.
  2. Once paneer separates,strain the paneer from way water.
  3. Wash the panner in running water and squeeze well.Remove extra water.
  4. Now Chenna/Paneer is ready.
  5. Take the paneer in to wider bowl add Maida and mix well.Knead in to fine Dough.(Knead for 5 min)
  6. Now,make a small small balls.Bcaz it'll increase in size while they cook.(Balls must be smooth not a cracked one)
  7. Make a sugar syrup,heat water & Sugar in pressure cooker.
  8. Add cardamom and saffron.
  9. Add all balls gently in to the sugar syrup.
  10. Close the lid and take 3 whistle in pressure cooker.
  11. Now show the cooker in running water,let all pressure goes out.
  12. Open the Pressure cooker and Transfer in to Bowl and let it cool for Half an hour and keep in Fridge.
  13. Now Yum Yum Rasgulla's r ready to Serve.



Note: Don't throw the way water.This's a protein water.Use this water for making paneer again (R) Mix the water while making chappathi dough.

Basanthi Sweet

Ingredients:

  1. Milk-4cups
  2. Sugar-1/2cup
  3. Sliced almonds/pistachios/pista-1tablespoon each
  4. Cardamom powder-pinch
  5. Corn flour-1 table spoon(mix the flour in little bit of water)
  6. Saffron-2
Method:
  • Pour milk in heavy and wider pan, cook the milk in medium flame.
  • Dont mix the milk frequently.will get thin layer on top.Take that milk layer gently with small spoon. and keep in different cup.
  • Boil the milk for 1/2hour.Milk quantity have to reduce to  1 cup.boil in medium heat.
  • Now add sugar and corn flour mixer.boil it for 2 more mns.
  • After,add all milk layers in to it ,boil it for 2 mns.
  • Add sliced almonds,pista ,cardamom ,saffron and give a very good mix.
  • Keep in fridge for 2 hrs,then serve..



For this recipe we need a patience.while cooking in non stick pan,dont allow to stick in bottom.Soak almons/pista in water of 15 mns,make a slice.Saffron will give a very nice color.
