Pal Payasam~My First Blog Anniversary




 Hi friends,it's my pleasure to express my happy feelings that i have achieved one year milestone in my blog.YAHOOO!! I learnt cooking  from the past three years only (after coming U.S). From my school days i was(even now) crazy in collecting recipes,that lead to think innovative in cooking and sharing recipes to all of you!! I wish to take this blog in long term success and helpful for viewers like you. Still i feel learning never ends and i'm learning from other bloggers as well.

Rasgullas (My 100th Post n Awards)

 Yeah Here's  My 100th Post...with full joy!!!Am Glad that i got an Award Shower  at the same Time... I never think i will hit a Century in a Short Period i.e.,100Days.Here i wish to thank all my follower friends & my dear ones...I have achieved this only with your Valuable Comments and feed backs!!!

I checked in many link for this recipe.Rasgulla r Bengal Traditional Sweet.Homemade cheese balls soaked in chilled sugar syrup.This's my first try.. Here you go with a Recipe.,




 Ingredients:


  1. Milk-4cups
  2. Lemon Juice-1/4 cup
  3. All Purpose Flour-1 tablespoon
For Syrup:
  1. Sugar-1 1/2 cup
  2. Water-4 1/2 cup
  3. Crushed Cardamom-1 (Optional)
  4. Saffron-few
Method:
  1. Heat a milk in heavy bottom pan.Once it's started boiling add lemon juice,mix it with a spoon& cook it for few more mins to get curdle.
  2. Once paneer separates,strain the paneer from way water.
  3. Wash the panner in running water and squeeze well.Remove extra water.
  4. Now Chenna/Paneer is ready.
  5. Take the paneer in to wider bowl add Maida and mix well.Knead in to fine Dough.(Knead for 5 min)
  6. Now,make a small small balls.Bcaz it'll increase in size while they cook.(Balls must be smooth not a cracked one)
  7. Make a sugar syrup,heat water & Sugar in pressure cooker.
  8. Add cardamom and saffron.
  9. Add all balls gently in to the sugar syrup.
  10. Close the lid and take 3 whistle in pressure cooker.
  11. Now show the cooker in running water,let all pressure goes out.
  12. Open the Pressure cooker and Transfer in to Bowl and let it cool for Half an hour and keep in Fridge.
  13. Now Yum Yum Rasgulla's r ready to Serve.



Note: Don't throw the way water.This's a protein water.Use this water for making paneer again (R) Mix the water while making chappathi dough.

Basanthi Sweet

Ingredients:

  1. Milk-4cups
  2. Sugar-1/2cup
  3. Sliced almonds/pistachios/pista-1tablespoon each
  4. Cardamom powder-pinch
  5. Corn flour-1 table spoon(mix the flour in little bit of water)
  6. Saffron-2
Method:
  • Pour milk in heavy and wider pan, cook the milk in medium flame.
  • Dont mix the milk frequently.will get thin layer on top.Take that milk layer gently with small spoon. and keep in different cup.
  • Boil the milk for 1/2hour.Milk quantity have to reduce to  1 cup.boil in medium heat.
  • Now add sugar and corn flour mixer.boil it for 2 more mns.
  • After,add all milk layers in to it ,boil it for 2 mns.
  • Add sliced almonds,pista ,cardamom ,saffron and give a very good mix.
  • Keep in fridge for 2 hrs,then serve..



For this recipe we need a patience.while cooking in non stick pan,dont allow to stick in bottom.Soak almons/pista in water of 15 mns,make a slice.Saffron will give a very nice color.
