Gobi Tikka / Cauliflower Varuval

 This's Fry will go along well with all type of rice,Biriyani,rasam satham,curd rice,Bise Bela Bath etc.,Can keep as Starter (R) Tea time snack too....Definitely kids will love it :) 
Ingredients:


  1. Cauliflower /Gobi-2 cup 
  2. Curd-2 teaspoon
  3. Lemon juice-1teaspoon
  4. Ginger Garlic Paste-1 teaspoon
  5. Corn Flour-1/2 cup
  6. Garam Masala-1 teaspoon
  7. Jeera Powder-1 teaspoon
  8. Salt /Red Chilly Powder-to taste
  9. Red color- pinch (optional)
Method:


  1. Cut the cauliflower in to a medium size pieces.
  2. Take a wider bowl,Put all ingredients together except Califlower.Mix with little water.
  3. Don't put more water.We r going to soak the cauliflower in to this.So make semi thick Batter.



    4.Now take the CauliFlower/Gobi and mix well with hand.Rest this for 30mns.
    5.Heat a Frying pan,and fry in medium high flame.Drain the oil and transfer in to Paper Towel.
   6.Ready to have...




Note:While frying don't put more in same time.,fry in little amount.

Potato Pepper Fry/Urulaikilangu Milagu Varuval



Very very simple recipe.,Will tastes gud with Curd rice,rasam satham,Variety rice.


Ingredients:

  1. Potato-2 nos
  2. Pepper powder/Salt-As u needed
  3. Turmeric Powder
  4. Oil-1 table spoon
Cut the potato and soak in water.,it'll stop sticking while frying.Drain well before put in to oil.
Method:


1.Heat oil in pan,add cubbed Potato,salt,pepper powder,turmeric  powder and mix well.
2.Don't close the lid.cook it till all turns cook and soft crispy.
      Note:If u want more spicy add red chilly powder and fry.

Okra Fry/Vendaikai Poriyal







Ingredients:

  1. Okra-20 nos
  2. Mustard/Channa dal/Urad dal-1/2 teaspoon each
  3. Oil-2 teaspoon
  4. Turmeric powder
  5. Salt/Red chilly powder-to taste
  6. Sambar powder-1 tespoon
Cut the edges ,and wash the Vendaikai.Then cut in to lengthwise (R)any desired Shape.




Method:

  1.  Heat Oil in pan,Add mustard,channa dal,urad dal and fry well
  2. Add Okra/Vendaikai ,put all dry ingredients give a mix and cook in medium heat.
  3. Don't put the lid while cooking
  4. This recipe will take maximum15 mns to cook,In between,regularly give a mix.otherwise Vendaikai/Okra will stick in bottom.
  5. Finally u can add some shredded coconut.(Optional)
  6. Serve with any type of rice.

Broccoli Fry/Broccoli Varuval

For my kid.,i started doing this recipe,now we all started to have this broccoli fry.This fry will go well with rasam satham.U can do the same recipe with Cauliflower also.
Ingredients:
  1. Brocolli-2 cup cut in to lenth wise
  2. Salt/Pepper-to taste
  3. Jeera-1teaspoon
  4. Turmeric powder-pinch
  5. Oil-2teaspoon
Method:
  • Heat pan,add jeera and roast.
  • Now add Brocoli(R)Cauliflower 
  • Add salt,turmeric powder,Pepper powdermix well and close the lid.
  • No need to add water., it's like steam cook only.
  • Once in a while give a mix and cover., do still Broccoli turns soft.Don't over cook the vegetable.
  • That's it ready to serve with rice.

Sepankilangu Fry/Taro Root Fry



                     
This's a shallow fry recipe.,This varuval will go with Rasam Satham,Curd rice,Sambar satham etc.,Basically in Sepankilangu/Taro root we'll feels Stickiness.,but in this fry we willn't find that.


Ingredients:


  1. Sepankilangu/Taro root-4
  2. Curd-1/2cup
  3. Rice flour-2tablespoon
  4. Corn flour-2tablespoon
  5. Salt-to taste
  6. Red chilli powder-To taste
  7. Turmeric powder-1teaspoon
  8. Curry powder-2 teaspoon
  9. Coriander Powder-2 teaspoon
  10. Ginger garlic paste-2teaspoon
  11. Oil-2-3 teaspoon
  12. Water-to sprinkle
Do this Fry/Varuval in Non-stick pan.It'll be very easy.First clean the Kilangu/Taro Root in running water and clean well.Heat a small pan heat little amount of water and half cook it.Once it's cooked.,let it cool down and peel the skin,and cut in to heavy 1" pieces.


Method:


  1. Take a wide bowl.,mix all ingredients with little bit of water except Sepankilangu/Taro root .
  2. Mix all with spoon,and add the Kilangu/Taro Root mix well again.
  3. Cover with lid and rest it for 30mns.
  4. After that heat a non-stick pan with 2teaspoon of oil.once the oil get heated add all kilangu/Taro root and Roast in all sides.
  5. Keep in medium flame and cook., all kilangu/Taro root have to turn in to dark red color.
  6. That's it..it's ready to have now!!

Potato Fry/Urulai Varuval

Ingredients:

  1. Potato-2 nos
  2. Ginger Garlic Paste-2teaspoon
  3. Red chilly powder-2teaspoon
  4. Turmeric Powder/salt-as needed
  5. Mustard-1/2teaspoon
  6. Curry leaves
  7. Oil-2teaspoon
This's not a deep potato fry,very simple recipe.It will be nice with all types of rice,sambar satham,rasam ,especially with  Curd&lemon Rice.Use Non-stick pan for this recipe,in normal pan there's a change of sticking in bottom.You can cut  Potato in any desire shapes.

 Method:

  1. Heat oil in the pan add mustard,curry leaves, let it splutter.
  2. Add Ginger garlic Paste and fry well dont allow to burn(will burn soon)
  3. Add diced Potato in give a mix to cover oil on it.
  4. Now add red chilly powder,turmeric Powder&salt give a mix.
  5. Keep the stove in Medium flame,dont add water to cook.once in a while give a mix,no need to close the lid also.  
  6. It'll take 10-15 minutes to cook.Then it's ready to serve.
In this you can also add water but it' gives Tender texture.and can use pepper powder instead of chilly powder.Kids will like this potato fry.
