Tomato Rice~Quick Version




Hi Friends, today am Posting very simple and Quick “Tomato Rice”, For "Blogging Marathon~16" under the theme “Cooking with Colors”. So, today’s color’s “Red”. I tried making tomato rice in couple of forms, compared to those things it tastes really nice and flavorful.  Adding Ghee for tempering, enhancing the Flavors’.It's perfect Lunch box recipe!!Do try and enjoy the recipe  J

Nutrela Biriyani~Soya Chunks Biriyani




 Today am sharing a simple One Pot Protein Enriched Rice.I love to add soya chunks in my Vegetable Biriyani!!Today i prepared this Biriyani with only Soya chunks ,it really tastes great!!I simply served it with Beaten Curd..

Soya Vangibath



Ingredients:

  1. Rice-1 cup(Cooked)
  2. Soya chunks-1/2 cup 
  3. Brinjal-4 nos (Chopped)
  4. Green chilly-2 (Slited)
  5. Onion-2 
  6. Lemon-1/2 
  7. Ginger garlic paste-1 teaspoon
  8. Oil and ghee- 2 table spoon 
  9. Salt
  10. Cilantro
Tempering:
  1. Mustard seeds-1/2 teaspoon
  2. Channa dal urad dal-1 teaspoon 
  3. Curry leaves
  4. Cashews-10 nos
  5. Green chilly-2 to 3 
Vangibath Masala Powder:
  1. Cardamom-3 
  2. Khas khas-2 teaspoon 
  3. Cinnamon-1 stick 
  4. Dried coconut-1 1/2 teaspoon 
Dry roast the above and make a powder.

Method:
  • Add soya chunks in to boiling water,cook it for 5 mins.And drain and wash well in cold water,then squeeze and keep aside.
  • Add the ginger galic paste and green chilly,fry for a while.
  • Heat oil and ghee,temper the ingredients one by one.
  • Add onion and fry,till gets golden color.
  • After that,add brinjal,fry well till roast.
  • Then,now add the soya chunks,fry for 1-2 mins in low flame.
  • Add salt  and rice mix well.
  • Finally add Vanghi bath powder and lemon juice,mix gently.
  • Sprinkle cilantro on top
  • Serve hot with Potato chips/any side dish!!

Soya Chunks Pulao






Hi Everyone ,hope u all doing great.Me too :) Time for Blog hop!!Event started by radhika of "Tickling Palates" .This week i paired with Neetu's "Hobby Chef".From her blog i took Protien rich Pulao recipe.You can add any other desired vegetables to this pulao.
Ingredients:


  1. Rice- 1 cups ( i used seeraga samba)
  2. Soya Chunks-3/4 cup
  3. Onion - 1 medium (Sliced)
  4. Tomato- 1 small (Chopped)
  5. Capsicum - half (Sliced)
  6. Green chilly-2 
  7. Red chilly powder- to taste 
  8. Tumeric powder-little
  9. Ginger garlic paste
  10. Cilantro
To Temper:
  1. Whole gram masala
  2. Cumin seeds-1/2 teaspoon
Method:
  • Soak rice for 15 to 30 mins.
  • Prepare soya chunks and chop ,in to small bite pieces.
  • Heat the pressure cooker,add ghee splutter whole garam masala & cumin seeds.
  • Add ginger garlic paste,fry  for 1 mins.
  • Then add onion & capsicum fry again for 2 mins.
  • Now add the chopped tomato and fry for 3-4 mins in medium heat,once it started losing oil add the dry powders,(Turmeric & Red chilly powder)
  • Put salt also.
  • Add the soya chunks mix well.
  • Now add required water to the rice ,put some chopped cilantro on the top.
  • Now close the lid and pressure cook it.
  • Once the whistle completely cool  downs,open the lid and  mix gently.
  • Serve hot with any vegetable kurma/Raitha...

Costa Rica ~ Gallo Pinto

Am posting this recipe for "Saji's" Blogoversary giveaway.This's really a healthy and fulfilling dish.Off course a quick recipe.






 Ingredients:
  1. Onion- 1 medium (Chopped)
  2. Green bell pepper-1 (Sliced in to small)
  3. Black beans- 1 cup
  4. Cooked rice- 3 cups
  5. Garlic-2 nos (minced)
  6. Cumin powder- 1 teaspoon
  7. Coriander powder- 1 teaspoon
  8. Salt/Pepper- To taste
  9. Cilantro - some
Soak black beans for 8 hours.Before cooking drain all water,add new water & pressure cook it.Add salt to it.

Method:
  1. Heat oil in the pan,add onion & garlic for 2 min till gets soft & color changes.
  2. Add the capsicum,fry it for one min.
  3. Now add the masala powders,Cumin and Coriander mix well.
  4. Put black beans and rice,mix well.
  5. Add salt and pepper to taste ,again give a gentle mix.
  6. Garnish with cilantro ,now ready to go..

Puzhi Satham/Puliyodharai





Time for Blog hopping.This time i was little late for posting my recipe.Hope,everybody know's about the event.For new visitors....,event started by Radhika from "Tickling Palates". 


For this week, i paired with Jayashri from "samayalarai-Cookingisdivine.blogspot.com".She's having sooo... many recipes in her blog.Was little confused...to select the recipe.Finally i decided to make Puzhi Satham/Puliyogare,My hubs Favorite. Many times he used ask me to prepare a spicy Puzhi Satham.I wont like more spicy  one,so i wont make :-) when i checked her recipe...it looks very flavorful and Yum...I tried and the result's  was too gud.


Let's see the recipe, 


Recipe for Pulikaichal:
Ingredients:


  1. Cooked rice-1 and half cups
  2. Tamarind -Small lemon size ball
  3. Turmaric powder-1/4 teaspoon
  4. Jaggery- 1 teaspoon
How to make Tamarind juice:
  • Wash tamarind in water first.Take out seeds and all waste things from it.
  • Take 1 cup of water ,put the tamarind and microwave it for 2 mins.
  • Once it cools,strain the juice using hands or filter.
  • Otherwise pour some hot water on washed tamarind,allow to cool. And follow the same.

For Tempering:
  1. Mustard seeds- 1 tablespoon
  2. Curry leaves - 1 string
  3. Peanuts- 2 tablespoon
  4. Red chillies-5 
  5. Channa dal-3 tablespoon
  6. Urad dal-4 tablespoon
  7. Hing- Little
To Roast & Grind:
  1. Red chillies-4 nos
  2. Methi seeds/Fenugreek seeds-3/4 teaspoon
  3. Urad dal-1 table spoon
  4. Channa dal-2 tablespoon
  5. Pepper corns- 1/2 teaspoon
Method:
  1. Roast all ingredients under "to roast & grind" list,in 1/2 teaspoon of oil.
  2. Allow it to cool down,then make in to a powder form.
  3. Now heat a wider kadai with 3 table spoon of sesame oil.
  4. Splutter all ingredients  one-by-one,  under tempering list.
  5. Roast all ingredients well in the oil,add the tamarind juice in it.
  6. Cook it for 5 mns in medium flame.
  7. Once raw smells goes from the mixture slowly add the ground spice powder to Tamarind mixture.
  8. Mix well with the spoon,after adding the spice powder the mixture will goes in to a thick form.Switch off the stove.
  9. Now the basic Puliogare mix's ready.
  10. Take some amount of the mixture and mix with the white rice.Mix gently to cover all white rice.





  • Let it rest for minimum 30mns before eating.



  • I served with Potato Podimas.

    Note:
    • Adjust spiciness to your taste.Add are decrease the amount of red chilly.
    • Use only Sesame oil,for exact taste.

    Methi Mutter Paneer Pulao



                               
    Generally  many people will avoid Methi leaves..Due to bitter taste.But in this recipe really u wont get the bitter taste.In fresh Methi(R)Dried leaves you'll get a buttery flavour. Definitely Kid's will like it :) U can do Methi Peas Pulao in same way with adding paneer.Try this recipe and give me feed back,


    Ingredients:


    1. Paneer- 200 gram
    2. Peas-1 cup
    3. Onion-2 medium (Chopped)
    4. Tomato-2 large (Chopped)
    5. Green Chilly-3
    6. Methi Leaves- 3 cups 
    7. Ginger garlic paste- 2 tablespoon
    8. Rice -2 cups
    9. Cloves-2 
    10. Cinnamon -1"  piece 
    11. Oil+Ghee-3 tablespoon
    12. Cilantro-Few(Chopped)
    13. Salt-To taste
    Dry powders:
    1. Red chilly powder-1 teaspoon(To taste)
    2. Garam masala- 1 teaspoon
    3. Jeera powder-1 teaspoon
    4. Turmeric powder-little
    For seasoning:
    1. Black Cardamom-2
    2. Jeera-2 teaspoon
    3. Bay leaves-2

    • Soak basmathi rice for half an hour.Drain all water,roast the rice with teaspoon of ghee.
    • Bring 4 cups of water to boil,add cloves,cinnamon and salt.Now add the roasted rice and cook till it cooks.Once it cooked drain all water,close the lid and keep aside.(To avoid the dryness )
    • Cut the paneer in to small bite pieces and shallow fry it with little oil.Keep aside.

    • Clean the Methi leaves and wash it well in running water.Drain all water and chop it finely.

    Method:
    1. Heat oil&Ghee in a Non-stick pan.Add black cardamom,jeera and bayleaf.roast it well.
    2. Add ginger garlic paste and fry.
    3. Add the green chillies and onion fry till gets soft.
    4. Then add the tomato and fry till get mushy.
    5. In this stage add the dry powders,(turmeric powder,red chilly powder,jeera powder,Garam masala)
    6. Mix it well.Add salt to taste.
    7. Now add the methi leaves and peas together,mix and close the lid for 3 min.(will cook soon)
                  8.Once peas turned little soft add the paneer cubes and give a nice mix.
                 9.Add the lemon juice.(Masala's ready )
                10.Now turn the stove in to medium and add the cooked basmathi rice and give a fine mix.
                11.Coat the rice with all masalas.
                12.Finally add some cilantro on top.Serve hot with Onion Raitha (R)Any Veg Gravy

    Green Peas Masala Rice

    Ingredients:
    1. Cooked Rice-1 cup(Basmathi/Sona masoori) 
    2. Green Peas-1/4th cup
    3. Mustard/Jeera-1/2 teaspoon each
    4. Onion-1/2 cup (chopped)
    5. Tomato-1 small (chopped)
    6. Salt/Turmeric powder
    7. Curry Leaves /cilanto
    To Grind:
    1. Coconut-1 tablespoon
    2. Green Chilly-1 (R) 2(Up to Taste)
    3. Ginger-1 small piece
    4. Garlic-2
    5. Fennel seeds-1/2 teaspoon
    Method:
    1. Heat oil in kadai,put Mustard,jeera,curry leaves and roast.
    2. Add onion and fry well.
    3. Add salt and Peas.Close the lid and cook till,peas cooks.
    4. Add tomato and fry.avoid mushy.
    5. Now add the grounded paste ,turmeric powder and 1/4 cup water ,cover the lid and cook for 3-4 min.
    6. Once the raw smell goes add some chopped cilantro,the Masala Mixture is ready now.
    7. Mix the rice with the masala,Ready to serve.
                
    Note: For kids add some ghee and mix.Ghee gives very nice flavor.

    Arisi Parupu Satham /Toor Dal Rice(Lunch Box Special)



                                     



    Ingredients:
    1. Rice -1 cup
    2. Thoor dal-1/2 cup
    3. Onion-1 medium (Chopped)
    4. Tomato-1 big (Chopped)
    5. Garlic- 2 nos (mashed)
    6. Green Chillies(R) Red chilly-2 nos(Slitted)
    7. Mustard/Jeer-1 teaspoon
    8. Curry leaves-few
    9. Hing
    10. Rasam Powder/Rasap Podi-1 teaspoon full
    11. Water- 2 and 1/4th cup.

    Method:

    1. Soak Rice and Dal together for 15 min.
    2. Heat oil In pressure cooker pinch Hing and  splutter Mustard,jeera and curry leaves.
    3. Add Green chilly and mashed garlic fry for 1 min in low flame.
    4. Add onions and fry till changes soft.
    5. Add tomato and fry till gets mushy.
    6. Now add water &Salt Bring  to boil.add Rasam Powder & Cilantro on top and pressure cook it.3 Whistle Is fine.
    7. Once pressure downs,mix gently.The rice and dal have to be separate.
    8. Ready to serve with Pickle (R) chips.

    Tasty Mushroom Biriyani

     
    Ingredients:
    1. Seeraga Samba Rice/Basumathi Rice- 2 cup
    2. Mushroom-2 cup (Diced)
    3. Onion-1 cup(Sliced)
    4. Tomato-2 nos(Chopped)
    5. Green Chilly-2
    6. Ginger Garlic Paste-2 table spoon
    7. Whole Gram Masala:  1.Cinamaon-1" piece 2.Cloves-3, 3.Cardamom-1 (Crushed with skin),4.Black Cardamom-1,5.star anise-1
    8. Cilantro/Mint leaves - few
    9. Oil and ghee -2 table spoon (Mixed)
    10. Lemon juice -1 table spoon
    11. Water-3 Cups
    To Grind:
    1. Almonds/Badam-4 nos
    2. Cashew- 4 nos
    3. Cilantro- 1/2 cup
    4. Mint-1/2 cup(Leaves alone)
    5. Red Chilly- 2 nos.
    Soak Almonds/Badam for 15 min in water and grind all together with little water.Soak the rice for 30min.

    Method:
    1. Heat Oil in the Pressure cooker,Put all whole dry masala and roast it.
    2. Add green chilly fry it.Then add ginger garlic paste and fry till raw smells goes out.
    3. Now add slice onion and fry till gets  Soft.(Don't roast more)
    4. Add tomato and fry till it mix with all mixture.
    5. Now put turmeric powder,jeera powder,garam masala and roat well.
    6. Add the grounded Mixture and Fry well in oil.
    7. Once u fried well add,Diced Mushroom and fry in oil.(Don't add water,Mushroom will lose water itself)
    8. Half Cook the Mushroom.
    9. Now pour Required water and add lemon juice.
    10. Check salt as well.Put chopped cilantro and mint leaves on top.




                                                
    10.And close the lid.Take 3 whistle.
    11.Once Pressure cums down,open the lid,slowly and  mix the rice with fork.
                                   

                                 






    11.Serve Hot with Onion Raitha (R)any veg Gravy.

    Note: For more flavorful Roast the soaked rice in teaspoon of ghee.U Can Try the same Method with Vegetables also,for tasty Vegetable Biriyani :)...

    Bisi Bela Bath/Sambar Satham

                          
    This's a very nice,flavor full dish.Bise bela bath/Sambar Satham and Potato chips a very good combination.I liked to have with some onion Raitha.If you u trying this first time means,make with Half proportion,bcaz rice and dal makes more quantity.I did this mistake when i made it first time :) .
    Ingredients:

    1. Rice-1cup
    2. Toor Dal/Tuvar dal-1/2 cup
    3. Vegetables-2cups (i used Carrots,Beans,Brinjal,Potato,Indian Broad beans(avarakai) )
    4. Onion-1 cup chopped+1/2 cup
    5. Tomato-1 sliced
    6. Green chillies-1 (striped)
    7. Tamarind juice-1/2 cup(thick juice)
    8. Cilantro-more
    9. Curry leaves-less than cilantro
    10. Hing-1/2 full teaspoon
    11. Oil
    12. Water-3cups+1 and half.+1/2 cup(Totally 5 cups)

    • For 1 cup rice-3cups of water
    • For 1/2 cup dal-1 and half cup of water
    • Plus 1/2 cup of water.
    Use small onions if u had.i did have that.Cut all vegetables in to bite size pieces,it'll  be good while eating.




    To Roast and Grind:

    1. Channa dal/Kadalai parupu-2 table spoon
    2. Urad dal-1 teaspoon
    3. Coriander seeds-2 tablespoon
    4. Cloves-2
    5. Cinamom-1"stick
    6. Jeera-1/2 teaspoon
    7. Methi seeds/Venthayam-1/2 tespoon
    8. Pepper corns/Milagu-1/2 teaspoon
    9. Red chilly-4 nos
    10. Coconut-1tablespoon(Don't roast this,simply grind with all roasted Ingredients)
     Roast all ingredients with little bit of oil one by one.Grind all these with enough water.






    Method:



    1.Soak Rice and Dal together for 5 mns and pressure cook with water.

    2.Heat oil in wider pan.,add onion and green chilly fry till onions gets soft.

    3.Now add all vegetables and fry well in oil.Close the lid and cook till all half cooked.

    4.After that  put sliced tomato and fry till gets soft.

    5.Now add grounded mixture and Tamarind juice.Mix well ,cover the lid and cook till vegetable cooks.(Don't over cook it,we need a chunky vegetables,while bite)


    6.Add 1/2 cup of water to this mixture an cook.add turmeric powder,salt,cilantro and chilly powder.


    7.Now mixture's ready..open the pressure cooker and add all cooked rice to this mixture and mix slowly.Turn of the gas.


    8.Heat oil for seasoning ,splutter mustard,add hing(perunkayam),curry leaves and onions roast till onion turns golden brown.


    9.Transfer the seasoning to top top of the rice and mix well.add chopped cilantro.
                                    
    Note:Addind cilantro,curry leaves,Hing (prungayam) more.,it's smells really gud.Mixing spoon of ghee in rice makes a very tasty rice.

    Tomato Biriyani/Tomato Rice/Thakali Satham







    Ingredients:


    1. Seeraga Samba/Basumathi rice-1cup
    2. Tomato-2(Chopped)
    3. Onion-1medium(sliced)
    4. Ginger &Garlic paste-2teaspoon
    5. Green chillies-2(slited)
    6. Red chilly powder & Salt-to taste
    7. Cilantro/Mint-1/2 cup each
    8. Whole gram masala----Cloves-2,Cinnamon-1"piece,Bay leaves-2 nos,Cardamom-1 (crushed)
    9. Oil/ghee-3tablespoon.
    10. Water-1 and half cup
    To Grind:
    1. Tomato-1
    I prefer to cook all type of biriyani,Pulao in non-stick pan only.If u want to cook in cooker/rice cooker... u can keep the same amount of water and cook.In Pressure cooker,2 whitle is fine.
    Dont soak the rice more than an 30mns.for more flavorful,roast rice with 1teaspoon of ghee.,and cook.I used Seeraga samba rice.,u can use Basumathi rice/ Sonamasoori.,

     Method:
    • Soak the rice for 30min.,and drain all water and keep aside.
    • Heat oil/ghee in pan,add all whole gram masala &fry well.
    • Add green chilly&ginger-garlic paste,fry for 30 sec.,
    • Add sliced onions,stir it.
    • Once,the onion turns soft.,add chopped tomato &grounded tomato.add turmeric powder,redchilly powder&Mix well ,cook it for 2mns
    • Once oil starts lose in edges.add Cilantro and mint leaves.
    • Give a fine mix.,water and let it boil for 3-4 mns.,check the salt and add the rice.
    • Close the lid,cook in medium flame for 15mns.
    • Once in a while ,give a mix and cook.
    • After that open the lid and add 1teaspoon of ghee,chopped cilantro and mix and serve with onion raitha/veg., gravy.

    Spinach-Mushroom Fried rice



    Ingredients:

    1.  Basmathi rice(Cooked)-2cups
    2. Mushroom-15 pieces
    3. Spinach-2cups striped
    4. Onions-1 small striped
    5. Spring onions-1/2 cup chopped
    6. Jeera-1/2teaspoon
    7. Garlic-3 chopped
    8. Green chillies-2-3
    9. Soy sauce-2teaspoon
    10. Chilly sauce-2teaspoon
    11. Black Pepper powder/salt-as needed
    12. Oil-3teaspoon
    I tried new combination with mushroom and spinach.,it's tastes really good.For kids we can use ghee instead of oil.


    Method:
    • Heat a oil in a pan,add jeera,green chilly,garlic give a mix.
    • Add onion and spring onion fry,don't over cook it.
    • Add mushroom and spinach,put some salt.wwit'll lose water,it'll cook soon.Dont over cook these too.
    • Add soy and chilly sauce mix well.
    • Finally add cooked rice,add pepper-salt as per taste and mix gently.dont break the rice while mixing.
    • It's done.ready to serve with any vegetable gravy.
      In fried rice., the vegetable should not be over cooked.Before cooking,dont soak rice more than an hour.cook with little bit of salt.
