Baked Masal Vadai


Ingredients:
Onion- 1 medium
Cilantro - some chopped
Curry Leaves -5 leaves chopped
Green Chilly- 1 chopped
Salt
Oil
To Grind:
Chana Dal - 1 cup
Fennel - 1teaspoon
Red chilly-3 nos
Garlic- 2 nos
Ginger - small piece



Method:
Preheat the oven at 400f.Cover the tray with aluminum foil or butter paper ,in which you bake.
Soak Chana dal for 3 -4 hours ,drain all water. Put all together in mixer and grind it coursly. Do not add water.
Transfer the dal mixture in bowl/plate. Add  Onion to salt from above list. Mix it well in hands.
Take small amount of mixture ,make it flat in between palm.
Arrange it in the tray.Top some cilantro leaves(Optional).  Drizzle it with half teaspoon of oil on each Vadai.
Keep it in oven ,bake it for 15 mins. After then, flip the vadais, drizzle some more oil and bake it for 15 mins.
Once you feel all the Vadais turn crisp, take it out.
Enjoy with cup of tea.

Beets Masal Wadai


Hi dears, am sharing one more colorful recipe which I tried yesterday for 4th day of “Blogging Marathon~16” under the theme “Cooking With Colors”. Today’s Color’s “Purple”. If you think about Pink, Purple first will get only beets in mind right?! Same here  :) yeah without any delay I decided to try Wadai with beets…It’s really excellent by Color and Taste. You can try with Uradal also, already I posted recipe for ,“Cabbage Wadai”  you substitute with Beets!!Hope everybody will love it!!Attracting color for Kids,my kid love these kind of deep fried items a lot!!He was exploring what Amma added in it like that?!Finally he Guessed it :)  Let’s move on the recipe,

Puttu~With Rice Flour






 Hi Friends,today am here with another quite simple &Healthy recipe ,for 3rd day of “Blogging Marathon~16”.Under the Theme “Cooking With Colors”.Today’s Color’s White. Offenly I make Puttu with Rice flour/Ragi flour.My kid love Rice Puttu a lot!!Though Ragi’s healthy,but he like this much!! I made this with Idiyappam Flour, but you can do it with usual rice flour also. Compared to making with rice flour, Puttu coming very Soft in Idiyappam/Appam flour.You will find  that in Indian store.I like to serve with Banana.Hope you to try this for Evening Snack :) Let's move on the recipe now!!

Today am sharing a Healthy and Fulfilling evening Snack recipe.I Tawa roasted this culets ,you can deep fry them .If you deep frying ,after mixing shapes ,dip the patties in Maida Batter then coat them in  bread crumbs nicely and  keep it fridge for 20-30 ,and deep fry it!!

Capsicum Chutney and Roasted Badams

This's our first Blog Hop Wednesday of 2012.Last time i missed to post my partners recipe,due to Holiday season.So,here am posting this month blog hop recipe and last month recipe!!I  have been paired with Jabeen of "Janeen's Corner"..She's one of my good friend...We know each other when we were in Phoenix!!I tried Capsicum chutney from her blog.I wanted to know how would be the taste.Taste was really good..My kid liked a lot :) So,you too try this and enjoy!!





Ingredients:

  1. Red Capsicum- 1 nos
  2. Onion-1 nos
  3. Green chilly-1 nos
  4. Red chilly-2-3 
  5. Urad dal-2 teaspoon 
  6. Coriander leaves 
  7. Salt
  8. Oil
To Temper:
  1. Mustard seeds-1/2 teaspoon
  2. Channa dal- 1/2 teaspoon
  3. Urad dal- 1 teaspoon
  4. Curry leaves
Method:
  • Heat oil in a pan,add and fry the channa dal and urad dal till gets golden color.
  • Add green chilly and red chilly ,and fry.
  • Then add onions and capsicum ,fry till gets soft.
  • Add Cilantro in to it.
  • Allow to cool,then blend in to a fine paste.
  • Then do seasoning with,mustard ,channa dal,urad dal and curry leaves...
  • Serve with Idli/Dosai!!


For this month i paired with Kokila of "Foodies Nest".From her blog i took a very simple and healthy dish.Almonds are good for health right..Generally we use to take some soaked almonds in empty stomach, after removing their skin..My kid eat Almonds in that form only!!When i saw the recipe,i just wanna to try for my kid..we all liked it!! The taste similar to roasted peanuts only..


Ingredients:
  1. Almonds/Badam- 1 cup
  2. Olive oil-1/2 teaspoon 
  3. Pepper and salt -to taste
Method:
  • Heat the pan,add oil.
  • Then add the Badams and fry in medium flame,roast till get golden color.
  • After that put,salt and pepper to taste,mix it.
  • Transfer in to Kitchen towel,allow it to cool for 5 to 10 mins,
  • That's it,crunchy Roasted Badam's ready to munch!!
Note:
  • After roasting i transfered the nuts in to kitchen towel,to avoid excess oil.This's totaly optional,you can enjoy with little oily .

Kothu Chappathi/Fried chappathi with Vegetables



Quick recipe with left over chappathies.




 Ingredients:

  1. Chappathi - 10 nos (Medium size)
  2. Onion- 1 (Stripped)
  3. Tomato-1 (Chopped)
  4. Carrot-1 nos 
  5. Beans- 10 
  6. Cabbage- 1/4 cup
  7. Cumin powder/Coriander powder-1 teaspoon
  8. Red chilly powder- to taste
  9. Ginger garlic paste- 1teaspoon
  10. Green chillies-2 nos (Chopped)
  11. Cilantro- 1/4 cup (chopped)
  12. Lemon juice- 2 teaspoon
  13. Shredded Coconut - 2teaspoon
  14. Salt-To taste
  15. Turmeric powder
To temper:
  1. Oil- 2 teaspoon
  2. Mustard-1 teaspoon
  3. Curry leaves-few
  • Strip all vegetables and keep aside.
  • Also stripe the chappthi in bite size pieces.
Method:
  1. Heat oil in pan,splutter mustard and curry leaves.
  2. Add ginger garlic paste ,green chilly fry for a while.
  3. Put onion fry till get's soft,
  4. Then now add tomatos ,add turmeric powder,cumin powder,coriander powder ,red chilly powder and salt fry till all get in to mushy.
  5. Add all stripped vegetables stir it and close the lid and cook it for 2-3 mins.
  6. Firm cook the vegetables.[don't cook soft]
  7. Once the vegetables done with cooking ,add the stripped chappthies mix well.
  8. Coat the chappthi with masala.
  9. Squeeze lemon juice,give it a mix.
  10. Add shredded coconut mix again.
  11. Finally add cilantro ,mix and serve hot.
Note:
  • Kothu chappathi can be severed in Tea time snack (or) main dish.

Low Calorie Broccoli & Tofu Bonda




 After diwali am posting  my first entry for Blog hop wednesday~Edition 2.Hope all of u enjoyed Diwali with friends and relatives :)Now coming to blog hop,Radhika's doing a great job,now she introduced new friends to us.Really interesting, thank u  radhika :). This week i paired with Vardhini of   "Zesty Palette"  .She's having a wonderful blog with various cuisine.Totally i confused what to cook!! Am not a tofu lover ,but i love low calorie foods.So suddenly i selected to cook,Low calorie healthy bonda. When I visit some other blogs, I wonder how this bondas would taste, but it is awesome!!Let's see the recipe now,
 
Ingredients:

  1. Firm tofu-1/2 pack
  2. Broccoli-2 cups(Finally chopped)
  3. Green chilly -2 (Finally chopped)
  4. Red chilly powder/Salt-to taste
  5. Corinader powder-1/2 teaspoon
  6. Cumin seeds-1/2 teaspoon
  7. Turmeric powder-little
For batter:
Ingredients:
  1. Besan flour-1/2 cup
  2. Rice flour-1/4 cup
  3. Chilly powder/Salt-to taste
Method:
  • Remove out the  tofu from the pack.Take out all excess water.
  • Place tofu on a plate and cover with one more plate and keep some weight on top and allow to drain all water for 30mins.
  • After that,Scramble it with hands. 
  • Chop the broccoli very finely.
  • Now take a wider bowl,add all ingredients one by one and mix well.
  • Make a small dumplings ,keep aside.
  • Now dumplings are ready.
  • For batter,take a bowl again,mix all ingredients and add little water for consistency.
  • Make a semi thick batter.Batter shouldn't be very thin.
  • Heat paniyaram pan,add little oil in it.Let oil get heat.
  • Then,take one dumpling ,dip in to gram flour batter and place in paniyaram pan.


  • Repeat the same for all dumplings,Close with the lid.
  • After 1 min open the lid and flip the bondas with spoon Or tooth pick.
  • Flip and cook,for 2-3 mins till all side gets golden color.
  • If you like drop very little oil on top of each bondas before taking out.
  • That's it,Hot and healthy bondas are ready to have :)
  • Serve it with some spicy chutney or sauce.

Wheat Pakoda

Last week one evening my hubby wants some hot cripsy snack to munch with Tea.Simply i tried pakodas with wheat flour  and cabbage...My mom used to make Bondas with wheat flour.But i don't like that much.I want to make a crispy one for him,so i tried in my style.Result was very good..let's move on to the recipe now!!

Ingredients:


  1. Wheat Flour-2 cups
  2. Onion-1 medium (Striped)
  3. Cabbage- 1/2 cup (Thinly Striped)
  4. Jeera-1 teaspoon
  5. Hing/Perunkayam-1 pinch
  6. Green chilly-2 (Diced)
  7. Salt & Red chilly powder- To taste
  8. Baking powder-1/4 teaspoon
  9. Curry leaves & Cilantro -some
  10. Water- As needed
  11. Oil -for deep frying
Method:
  • Take a wider bowl,add all ingredients except water, and mix well in hands.
  • Sprinkle little water at once ,mix like semi chappthi dough.
  • Heat oil in Kadai,once oil heated pinch the dough directly in to oil.
  • Fry both the sides in medium heat,fry till all sides gets crispy.
  • Then ,use spatula to drain the excess oil.
  • Transfer in to kitchen towel,allow to drain for 1 min & enjoy with hot Cup of Tea /Coffee.... :)

Coffee Cake/Tea time Snack

Simple Cake recipe, can be serve in Evening with Coffee (R) Tea..Can add tutti frutti also in cake mixture.


Ingredients:

  1. All Purpose Flour-2 cups
  2. Baking Powder-3 teaspoon
  3. Salt-1/2 teaspoon
  4. Sugar-1/2 cup(Increase sweetness as u like)
  5. Egg-1 
  6. Milk-1/2 cup
  7. Oil-1/3 cup
  8. Vanilla-1 teaspoon(Optional)
Method:
  1. Pre heat oven to 360 F .Grease 9" round (R)Square pan.
  2. Take a bowl,add egg beat well.
  3. Add milk,oil and vanilla beat well again.
  4. Mix All purpose flour and baking soda together.Add little by little in to egg mixture.
  5. Beat again for 2 min.
  6. Then pour the mixture in to greased pan,and bake it for 25-30 mins (R)Until done.
  7. After that allow to  cool for 15 min,then transfer in to plate,cut in to Pieces.

Patani Sundal/Green Peas Sundal

Ingredients:

  1. Patani/Green Peas- 1 cup 
  2. Onion-1/2 medium (chopped)
  3. Cilantro-some
  4. Turmeric powder & Salt
Soak the green peas for overnight and cook with small amount of salt.

For Seasoning:
  1. Red chilly-3 nos
  2. Curry leaves- Few
  3. Mustard seeds/Channa dal/Urad dal -1 teaspoon each
  4. Curry leaves- few
  5. Oil
To Grind:
  1. Coconut-2  tablespoon
  2. Garlic- 2 nos
Grind both in to coarse paste with little water.

Method:
  1. Heat oil in a pan,splutter all seasoning ingredients one-by-one.
  2. Add onion and fry till get's soft.
  3. Now add the boiled peas,put salt,turmeric powder,mix well
  4. Then add the grounded coconut and mix well.
  5. Finally add some cilantro on top ,mix well and serve.
Note:Can do same method for all type Sundal.Splutter  some chopped green chillies for extra spiciness.

Maravali Kilangu(Tapioca) Stir fry -Tea Time Snack

I had this dish in one my friend home.It's really very tasty dish...very healthy too..Many people use to steam cook the Maravali Kilangu and have..same method for this.Steam cook and seasoning that's it.. Recipe Follows.,
 Ingredients:


  1. Maravali Kilangu/Tapioca- 1 large
  2. Channa dal-2 teaspoon
  3. Urad dal-1 teaspoon
  4. Curry leaves- few
  5. Red chilly-4
  6. Shredded Coconut-Little 
  7. Salt
  8. Oil

Take out the harder skin part from the kilangu/Tapioca.Cut in to small,small pieces.Then Steam  cook in Idli pan.Will cook soon.Have to check in between.Dont Allow to get mushy.


Method:
  1. Heat oil in pan,splutter mustard seeds.
  2. Roast chana dal,urad dal,red chilly and curry leaves.
  3. Add required salt.
  4. Now add cooked Kilangu and give a mix to coat all the spices.
  5. Finally add shredded coconut on top and give a mix& turn of the stove.
  6. Ready to have with cup of tea... :)

Power Poha/Nutritious Poha





Very Healthy and Nutritious Food Cum TeaTime Snack.For this Recipe Wash and drain the Poha/Aval and keep aside.No need to soak in water.


Ingredients:


  1. Poha/Aval-2cups
  2. Boiled Channa-1/4 cup
  3. Onion-1 (chopped)
  4. Tomato-1 (chopped)
  5. Turmeric powder
  6. Lemon Juice-2 teaspoon
  7. Oil-1 teaspoon
  8. Green chilly-2 (slit)
  9. Cilantro-Few
Method:
  1. Heat oil in pan,splutter mustard.
  2. Add onion and green chilly , saute well.
  3. Add tomato and fry for 1 min.
  4. Now add boiled channa,mix well add turmeric &salt.
  5. Add the Poha and mix gently,add lemon juice on top, again give it a mix.
  6. Add some cilantro.
  7. Ready to have now.

Gobi Tikka / Cauliflower Varuval

 This's Fry will go along well with all type of rice,Biriyani,rasam satham,curd rice,Bise Bela Bath etc.,Can keep as Starter (R) Tea time snack too....Definitely kids will love it :) 
Ingredients:


  1. Cauliflower /Gobi-2 cup 
  2. Curd-2 teaspoon
  3. Lemon juice-1teaspoon
  4. Ginger Garlic Paste-1 teaspoon
  5. Corn Flour-1/2 cup
  6. Garam Masala-1 teaspoon
  7. Jeera Powder-1 teaspoon
  8. Salt /Red Chilly Powder-to taste
  9. Red color- pinch (optional)
Method:


  1. Cut the cauliflower in to a medium size pieces.
  2. Take a wider bowl,Put all ingredients together except Califlower.Mix with little water.
  3. Don't put more water.We r going to soak the cauliflower in to this.So make semi thick Batter.



    4.Now take the CauliFlower/Gobi and mix well with hand.Rest this for 30mns.
    5.Heat a Frying pan,and fry in medium high flame.Drain the oil and transfer in to Paper Towel.
   6.Ready to have...




Note:While frying don't put more in same time.,fry in little amount.

Eggless Curd Cake

This's simple cake recipe,For this you no need a cake blender just our Mixer(Mixee) is fine.If u had Cake blender use that.
Ingredients:


  1. Maida/All purpose flour-1 3/4 cup
  2. Curd-1 cup
  3. Oil-3/4 cup
  4. Sugar-1 cup
  5. Cooking soda-1/2 teaspoon
  6. Coco powder-8 teaspoon
  7. Milk-2 table spoon
  8. Vanilla essence-1 teaspoon
  9. Coffee Powder-1/2 teaspoon (optional)
Method:


  1. Preheat the oven in to 350 degrees F.Grease a 9" pan with butter (R)ghee.

2.Sieve all dry ingredients first (i.e., Maida,cooking soda,coco powder and coffee powder) and keep aside.  

3.Take mixer ,add curd,oil,and sugar and blend it till all  dissolved.

4.Now add little by little of Sieved Mixture (Maida,soda,coco,coffee).blend it for 2-3 min.

5.Now add vanilla essence and milk..finelly beld it for 2-3 min.

6.Transfer all the mixture to greased Pan.Tap it.             

                   
7.Now keep in to Oven and Bake it for 35-40 min.,
8.After that take out,and let it get cool around 30min.,and cut it.


                     



    Insert a thin knife (R) tooth pick in center of the cake to check whether  it baked are not.Like how we check Idlies...If u got a batter in your knife,cake have to bake still more min.So,adjust the time how your cake is Baking.First set the time for 25 min and then add 5 min.


Note: If u want,you  can add some chopped nuts(Almonds,cashew) in cake mixture and bake it.
