Capsicum Mutter Masala/Peas Capsicum Curry (Low-Fat Version)





Are you looking for simple n tasty Peas Masala...If yess...then it's for you all...!!And one more interesting thing's it's low-fat version.No cashew,badam paste and no milk.. I used olive oil for tempering.Adding butter's completely  an optional ,it gives a nice glassy texture n flavour. Try it and enjoy it :) ,

Yeah..it's a BM :) Am happy to do "Blogging Marathon ~16 "..This's my second time.I have chosen a theme "Cooking With Colors".Means,You are not supposed to add any food colors to it ,only Natural Colors!!That's the theme.Feels n sounds simple n Interesting so i selected it,because with my Little boy i couldn't take much complicated one!!So...Today's Color's Green.Let's move on to Today's recipe...

Paneer & Mushroom Gravy





Usually i grind onion tomato separately or together for making any north indian Curry/Gravy.But in this recipe i didn't use any onion or  tomato paste,for a change :) !!
Ingredients:
  1. Mushroom- 2 cups (Chopped)
  2. Paneer- 200 grams ( Cubed)
  3. Onion- 1 medium size (finely chopped)
  4. Tomato-2 medium size(finely chopped)
  5. Green chilly-2 (Slit)
  6. Ginger garlic paste-1 table spoon
  7. Cumin powder/Jeera powder-2 teaspoon
  8. Coriander powder- 1 teaspoon 
  9. Turmeric powder-little
  10. Red  chilly powder/Salt- To taste
  11. Kasoori methi- 2 teaspoon
  12. Oil+Ghee- 2 teaspoon
  13. Water- As required
Tempering:
  1. Cinnamon-small stick 
  2. Cloves-2
  3. Bay leaves-1 

To Grind:
  1. Cashew nuts- 5 nos
  2. Badam-8 nos
  3. Poppy seeds/Kas kas-1 tablespoon
Soak this in hot water for 15 mins and grind it  with little water.


Method:
  • Heat oil+ghee in pan,splutter whole gram masala one by one.
  • Add green chilly,
  • Add ginger garlic paste saute well.
  • Now add onions, saute it for 2 mins or till change in color.
  • Then put tomato and fry till it goes mushy.
  • Now add the dry powders ,fry for 1 min [cumin powder,coriander powder,chilly power,turmeric powder] 
  • Add mushroom , saute it well for 1 min.
  • Pour little water,once water is boling add the ground paste.
  • Mix well ,close the lid and cook for 2-3 mins.
  • Put the paneer in to the gravy.Bring to boil for couple of mins.
  • Then add the kasoori methi on top,
  • Add sour cream and mix.[Optional]
  • Add cilantro and serve with Pulka roti,Naan,chappathi,rice etc.,

Aloo Paratha with Paneer Tikka Masala


 Third week of Blog Hop Wednesday,started by Radhika of "Tickling Palates". This week i Paired with  Ayeesha , "Taste of Pearl City". She's having a wonderful space,really it's tough for me to Choose one dish from there. Finally i Chosen one of my family's favorite dish.I know ,all of u like Paneer :),Let's see the recipe here,












Aloo Paratha:
                 
                                   
Ingredients for Dough:
  1. Atta Flour/Wheat Flour- 1 and half cups
  2. Curd/Yogurt-2 teaspoon
  3. Ghee-1 teaspoon
  4. Bicorbanate of soda-pinch
  5. Honey-1 teaspoon
  6. Salt-To taste
  7. Ghee/Oil- to Roast Parathas
For Stuffing:
  1. Boiled Potato/Aloo-2 small size
  2. Onion-half medium (Finally chopped)
  3. Green chilly-1 (Finally chopped)
  4. Cilantro-1/4 cup (Finally chopped)
  5. Salt -To taste
Method:
  1. Shift the Atta flour/wheat flour and cooking soda.
  2. Take a wider bowl,add the flour in to it,add yogurt,ghee & honey.Mix well in hand.
  3. Then add required water,make a soft tight dough.Knead well,for 5-7 mins.
  4. Cover with lid.
  5. Rest it for minimum 2hrs.
For Stuffing:
Method:
  1. Take a wide bowl,mash the boiled potato,avoid lumps.
  2. Add onion,green chilly,cilantro,salt and pepper.
  3. Mix well with the hands.
  4. Now,stuffing is ready.
Making Parathas:
  1. Knead the Dough again  & make a small balls.
  2. Make a small balls with Potato mixture.
  3. Now roll the Paratha dough in to disired size ,keep the stuffing in middle and cover it.
  4. Again roll it with little bit of raw flour,make a circle shape.
  5. Heat the Tawa&roast the Parathas on both the sides,with Ghee (R)Oil.
  6. Now Paratha's ready to serve with any veg Curries.

Aloo Paratha's simply taste superb with plain Curd.But Paneer Tikke Masala give more taste,let c the recipe here,

                           

Paneer Tikka Masala:


                            

Ingredients:
  1. Paneer-200grams(Diced)
  2. Onion-1 small(Diced)
  3. Tomato-1 (Diced)
  4. Red Bell pepper-1/2 (Diced)
  5. Green Bell Pepper-1/2 (diced)
  6. Chilly Powder- To taste
  7. Kasoori Methi-2 teaspoon
  8. Salt-Little
  9. Oil-1 teaspoon
Take a bowl & Marinate all the above ingredients for 1 hr.After that heat pan with table spoon of oil and roast eveything together till all turns roasted.

For Gravy:
  1. Onion-1 medium (Chopped)
  2. Tomato-1 medium(pureed)
  3. Ginger Garlic -1 teaspoon
  4. Chilly Powder- To Taste
  5. Coriander Powder-1 teaspoon
  6. Garam Masala-1/4 teaspoon
  7. Maida-2 teaspoon
  8. Jeera-2 teaspoon
  9. Salt and pepper-To Taste
  10. Oil/Butter/Ghee- 1tablespoon
Method:

  1. Heat a Non-stick tawa,with Ghee,roast cumin seeds.
  2. Add Ginger garlic paste,fry it.
  3. Add Onion and fry well.
  4. Now add maida in to it and fry for 1-2 mins.
  5. Then add the tomato Puree,mix well.
  6. Add required water in it.stir well.
  7. Add the dry powders i.e.,Chilly powder&coriander powder, cook it for 2-3 mins again.
  8. Once all came to thick gravy ,add the above cooked paneer capsicum mixture and stir slowly.
  9. Cook the gravy for 5 mins in low flame.
  10. Adjust salt and pepper.
  11. Finally add garam masala and cilantro leaves on top.
  12. Now the rich Paneer Tikka Masala is ready to go with any type of Indian Flat bread ,Rice and Pulao.

Egg Butter Masala

                     
Ingredients:


  1. Egg-3 
  2. Tomato-1
  3. Green chilly-1
  4. Butter- 2 table spoon
  5. Curd-1/4 cup
  6. Coriander powder- 1 teaspoon
  7. Coconut powder- 1 tablespoon
  8. Red chilly powder-2 teaspoon
  9. Salt
  10. Turmeric powder
  11. Jeera-1 teaspoon
  12. Ginger garlic paste- 2 teaspoon
  13. Cilantro-few
  14. Oil -to fry eggs.
Method:
  1. Boil the eggs,Separate egg white &Yolk.Cut egg whites in to small bite pieces.Fry in little bit oil and keep aside.Let it cool for 5 mins.



2.Then add the fried egg in to wider bowl,put curd,Coconut powder,Coriander powder and red chilly powder mix well with spoon.
3.Rest this for 15 mins.
4.Now heat butter in pan/kadai,splutter jeera,green chillies.
5.Add ginger-garlic paste,fry well in the butter.
6.Add turmeric powder,mix well.
7.After 3 mins ,add chopped tomato,fry well in medium flame.Put salt.
8.Once,tomato gravy cooked,add the fried egg mixture.give a gentle mix.


   9.Add required water,mix well and close the lid.Cook it for 5 more mins.
10.Now,open and add cilantro on top.
11.That's it Hot & Spicy Egg Butter Masala's ready to have with Roti/Nan/Rice.


Note: In this curry i didn't use egg Yolk.If u like to add ,add the yolks finally.Cook that for 2-3 mins.

Paneer Capsicum Masala/Paneer Capsicum Gravy









This's one my creation with adding  nuts paste and onion tomato Paste.Basic ingredients  is same only but, i tried in different style.Lets see the recipe,


Saute,under ingredients in little oil and grind in to  smooth paste, with little water.
Ingredients 1:
  •  Cloves-3
  •  Cinnamon-1" piece
  •  Onion- 1 big size(chopped)
Ingredients 2:

Soak these ingredients in water for 30 mins to 1 hour,grind in to smooth paste and keep aside.

  • Cashew nuts-5 nos
  • Badam/Almonds-5 nos
  • Red chillies-4-5 

Ingredients 4:
 Basic list for gravy,
  • Take 3 large tomato and make a puree.
  • Ginger Garlic Paste-1 tablespoon
  • Bay Leaves-2
  • Garam masala-1 teaspoon
  • Salt
  • Kasoori methi leaves -Little 
  • Red chilly powder-(Optional)
  • Jeera powder-1 teaspoon
  • Oil/Butter-2 tablespoon
  •  Sour cream - 2 tablespoon (Optional)



Ingredients 5:
              Dice all three in to small bite pieces,and shallow fry one by one,in very little oil.Keep aside.
  • Paneer- 200 grams
  • Onion- 1/2 medium size
  • Capsicum-1/2 medium size(I used red capsicum)










Method:
  1. Heat oil in a pan, add jeera and bay leaf roast it.
  2. Next add ginger garlic paste saute well.
  3. Now add the grounded Onion mixture ,under Ingredients 1 list.Fry this for almost 2-3 mins in low flame.
  4. Then add the tomato puree,add dry powders (Tumeric powder,red chilly powder,jeera powder)  and salt. give a mix.Cook it for 5 mins in low flame.
  5. Once the gravy came semi thick add nuts and red chilly mixture,under Ingredients 3 list.
  6. Add little water and close the lid,cook this for 2-3 mins.In between give a mix.
  7. Once the nuts raw smells goes from the gravy add,shallow fried Onions,capsicum, and paneer.
  8. Add Kasoori methi on top,give it a mix,boil it for 2-3 mins.
  9. Put the garam masala powder on it mix well.\
  10. Add the sour cream in to gravy and mix gently with spoon.Boil it for 2-3 mins in low flame that's it,Yum Yum Curry/Gravy is ready to serve.
  11.  Garnish it with sour cream and cilantro,serve hot with any type of Roti and Pulao.

Tofu-Carrot Paratha



Tofu's very low in Cholesterol.Very good source of Protein.Best substitute for "Paneer".Can make all variety of Gravy with Extra Firm Tofu i.e.,Palak Tofu,Tofu Butter Masala,Kadai Tofu...etc., like as we does with "Paneer".Ok let's C the recipe,


Ingredients:


  1. Extra Firm Tofu-1 pac.,
  2. Carrot-1 large(Shredded)
  3. Ginger Garlic paste- 2 teaspoon
  4. Green chilly-1 (chopped) Optional
  5. Red chilly powder- to taste
  6. Amchoor powder-1 teaspoon
  7. Garam Masala-1/2 teaspoon
  8. Salt & Turmeric powder
  9. Oil-2 tablespoon
*Cut the Tofu cover and take out all water and Squeeze the tofu in hands.Drain out all the water.Scramble it well in hands&Keep aside.

For Paratha Dough:
  1. Atta Flour-2 cups
  2. Cilantro-1/2 cup(Chopped)
  3. Jeera-2 teaspoon (Dry Roast & Crushed)
  4. Water-As required
  5. Salt 
Method:


  1. Take a wider bowl mix all ingredients in hand.
  2. Then pour water little by little,make a tight dough.
  3. Cover  &rest it for 30 mins.
  4. For stuffing heat a oil in pan.
  5. Add  ginger garlic paste  fry for a while.
  6. Add green chilly and fry.
  7. Then put carrot ,give it mix .cook for 2mins.
  8. Now add scrambled tofu and fry well in medium heat for 10 mins.
  9. Allow all excess water dries out.
  10. Once water evaporates(It'll similarly looks like Scrambled Egg(Egg Poriyal))add red chilly powder,tumeric powder,garam masala and amchoor powder and mix well,cook it for 2 mins.
 
11.Switch off the stove, Let it cool down.
12.Then divide a dough in to equal parts, Roll it in to small circle.
13.keep a spoon full of tofu mixture & cover it.
14.Dust the stuffed dough in flour,& make a 5" circle.
15.Then make a parathas.Roast in both the side with little oil.
16.Serve Hot with any Veg., Curry R simply with Curd.

Bhatura With Kadai Channa Masala

All time kids favorite dish.. Bhatura& Channa Masala.For diff i tried Kadai channa masala.Both the recipes from Net only..  Bhatura recipe, from "Sanjeevkapoor.com",really came out very soft and fluffy one.Kadai channa's from "You tube".
I wont say this's my first trail,my third  trail :-) Here U go for recipe....
Recipe for Bhatura:
Ingredients:


  1. Maida/All purpose flour-2 and 1/2cups
  2. Yogurt-1/2 cup
  3. Baking Powder-1/2 teaspoon
  4. Bicarbonate Soda-a pinch
  5. Salt-1 teaspoon
  6. Sugar-2 teaspoon
  7. Oil- 2 teaspoon+to deep frying
  8. Water - As needed
Method:
  1. Sieve all purpose flour,Baking soda & Bicarbonate soda in a wider bowl.
  2. Add salt,sugar,curd & oil,mix well in hand then add required water and make a soft tight dough.
  3. Apply some oil on top and cover it with wet cloth. 
  4. Rest the dough for 1-2 hours.
  5. Then make small balls,cover &keep the balls 10 mins for ferment.
  6. Grease your palms in with oil &flatten the balls.
  7. Then,roll in to 5" circle ,& Deep fry the bhaturas in oil.
  8. Drain the Fried Bhaturas in Paper towel.
  9. Now Bhaturas R ready to serve...

Kadai Channa Masala:

             
Ingredients:
  1. Boiled Channa-2 cups
  2. Tomato-6
  3. Garlic Paste-2 teaspoon
  4. Ginger- 1 teaspoon(Chopped)
  5. Coriander powder- 2 tablespoon
  6. Red chilly powder-To taste
  7. Turmeric powder-1/2 teaspoon
  8. Garam masala-1 teaspoon
  9. Kasoori methi-2 teaspoon 
  10. Cilantro- 1/2 cup (chopped)
  11. Salt-To taste
  12. Ghee-2 teaspoon
*Microwave tomato for 6 min,remove the skin and chop in to small pieces.Keep aside.
*Take a hand full of boiled channa,grind in to smooth paste in mixer with required water.
Method:
  1. Heat ghee in pan,add ginger paste and fry for while.
  2. Now add coriander powder,red chilly powder,turmeric powder & fry well in ghee.
  3. Add the chopped tomato and fry for 2-3 mins.
  4. Now add the grounded Channa in to it.Mix well.
  5. Cook it for 2-3 mins in  low flame.
  6. Then add the garam masala ,methi leaves&salt,give it a mix.
  7. Finally check salt and add cilantro on top and mix well,
  8. Now,Kadai Channa Masala's ready to have with Hot Bhaturas..
  9. Serve with chopped onions and diced Lemon..

Paneer Butter Masala

Paneer Butter Masala!!!Yeah Everyone's Favorite dish.... :) I do Paneer Butter Masala in Various type,depends on Time & Mood..This Gravy's really very rich and delicious with nice aroma..Try and give me feed back...Recipe follows.,


Ingredients:


  1. Paneer- 200 Grams
  2. Onion-2 (Medium)
  3. Tomato-2 (Large)
  4. Butter-2 tablespoon+ oil(Teaspoon)
  5. Ginger Garlic Paste-2 teaspoon
  6. Garam Masal-1 teaspoon
  7. Coriander Powder-1 teaspoon
  8. Water-1 cup
  9. Milk-1/2 cup
  10. Dry Methi Leaves-2 tablespoon(Crushed)
  11. Jeera/Cumin-1 teaspoon
  12. Whole Garam Masala-Cinnamon-1 ",Cloves-2,bay leaves-1
  13. Sour Cream-Little(Optional)
Soak and grind:
  1. Cashews-5 (R) 6
  2. Almonds/Badam-3
  3. Kas Kas-2 teaspoon
  4. Red Chilly-4
*Cut Paneer in to any desired shape,shallow fry (R)deep fry in oil and keep aside.No need to soak in Hot water.Can add directly to the gravy .,it's turning so soft .All time i do like this only.

*Soak all given ingredients for 15min and grind in to fine paste ,with very little water.

*Make the Tomato Puree with all tomatos.

*Boil onion in water and grind it in to smooth paste,with little water.


Method:


  1.  Heat Butter+oil in Non stick pan.Add jeera,let it splutter.
  2. Add whole gram masala(Cloves,cinnamon,Bay leaves) and roast till get aroma.
  3. Add ginger garlic paste and fry well.
  4. Now add the onion paste,fry for 2 mns.No need to cook for longer.(Bcaz already cooked)
  5. Then add tomato puree and mix well,bring to boil for 3 min in medium flame.
  6. Once boiled add the Grounded Paste,mix well.
  7. Add Milk and Water and bring to boil.Cook in low flame .
  8. Once u got the required consistency add the garam masala,coriander powder mix well.
  9. Add the fried Paneer in it.
  10. Now add dried methi Leaves and mix well.
  11. Add some chopped cilantro,mix well.
  12. Finally add Sour cream on top and mix well,that's it Yum Yum Paneer Butter Masala is Done..... 



Note:If u felt the gravy is thick,add some more milk and bring to boil .One more tip,instead of frying paneer cut in to desired piece and boil it in water for 5 mns and drain and add to gravy.

Stuffed Vegetable Paratha/Vegetable stuffed Paratha

One more Stuffed Paratha...One more Creation of Mine.Enjoy... 


Ingredients For Stuffing:

  1. Carrot-1 nos (shredded)
  2. Beans- 10 nos (Finely chopped)
  3. Cabbage-1/2 cup (Finely chopped)
  4. Ginger Garlic Paste-1 teaspoon
  5. Garam masala-1/2 teaspoon
  6. Red chilly powder/Salt to taste
  7. Lemon juice-1 teaspoon
  8. Cilantro-few 
Ingredients For Dough:

  1. Atta Flour-1 cup
  2. Maida-1/4 cup
  3. Jeera-1 teaspoon(optional)
  4. Salt
Take a wide bowl and mix all ingredients with enough water,make soft tight Dough.Close with a lid &Rest it for 15min.


Method:

  1. Heat oil in pan,add ginger garlic paste fry well.
  2. Then add Cabbage and fry little.
  3. Now add carrot and Beans together,mix well.Add dry all dry powder(Red chilly powder,Garam masala,Turmeric powder,salt).
  4. Don't Over cook it,just cook in low flame.Vegetable have to be in half cooked only.Just close the lid and cook for few min.
  5. Finely add cilantro,give a mix and turn off the flame.Allow to cool Down.Now,stuffing is ready.
  6. Heat a normal Chapathi Pan,and start rolling the chapathies,take 2 teaspoon full of Stuffing,keep inside and roll in to a parathas.


        

    7.Then roast like Regulars Chapathi(R)Parathas.
    8.Serve Hot with Curd.
                         
I have used Cabbage instead of onions,You can use onion if u like.You can keep same stuffing for Bread  sandwiches too.


Note: Chop the Cabbage and Beans in to very fine pieces.Otherwise rolling will be tough.

Masoor Dal (Curry)





This's a basic Dal curry.,U can do same method with Moong gram dal(Pasi parupu) also.
Ingredients:

  1. Masoor Dal-1/2 cup
  2. Onion-1/2 cup (chopped)
  3. Tomato-1 (chopped)
  4. Garlic- 2 nos (finely chopped)
  5. Green chilly-2 (slit)
  6. Mustard /jeera-1 teaspoon each
  7. Garam masal-1/2 tespoon
  8. Oil/salt
  9. Half lemon
Method:

  1. Pressure cook the dal with salt and turmeric powder.2-3 whistle is enough.
  2. Heat a Kadai with 2 teaspoon of oil,splutter mustard,jeera and put green chilly and garlic give a mix.
  3. Now add Onions and fry till turns color.
  4. Add tomato,fry till mushy.add salt.
  5. Then Pour the dal in to Kadai,give a mix let it boil for 2 min.,add little water to semi thin consistency.
  6. Add Garam masala powder and mix,cook it for 1 more min.,
  7. Finely Garnish with cilantro.Serve hot with Chapathi,rice...
  8. Squeeze lemon on top while having.(Optional)
