Poosanikai Poriyal/Yellow Pumpkin Poriyal

Ingredients:


  1. Poosanikai/Yellow pumpkin-2 cup (diced in to small bite pieces)
  2. Onion-1/2 medium(Chopped)
  3. Red Chilly-2 nos
  4. Channa dal-1 teapoon
  5. Urad dal-1/2 teapoon
  6. Mustard seeds-1 teaspoon
  7. Curry leaves-few
  8. Salt/Turmeric powder
  9. Coconut-2 table spoon(Optional)


Method:


  1. Heat oil in Kadai,splutter mustard,curry leaves.
  2. Roast channa dal,urad dal & curry leaves.
  3. Add onion and fry till color change.
  4. Now add diced pumpkin,give a mix.
  5. Add turmeric powder & salt mix it and close the lid for 2 mins.
  6. Give a gentle mix one in a while till pumpkin get soft.Close lid and cook it all gets soft.Cook in the medium flame.
  7. Press one small piece of pumpkin with spoon,if the pumpkin goes mushy that means it's done.Add some shredded coconut and switch off the stove.
  8. Ready to serve with White Rice..
Note: Can replace red chilly powder (R) green chilly to red chillies.

Spinach Poriyal

Ingredients:


  1. Spinach-2 cups (Chopped)
  2. Yellow Split Moong Dal-1/4th cup
  3. Onion-1/2 cup (Chopped)
  4. Red Chilly-1 nos
  5. Garlic-2 nos(Crushed)
  6. Shredded coconut-1 table spoon
  7. Mustard seeds-1 teaspoon
  8. Chana dal/Urad dal-1 teaspoon
  9. Salt /Turmeric powder

Soak Yellow moong dal in water for 15 min,drain and keep aside.

Method:
  1. Heat Teaspoon of oil in pan,splutter Mustard ,chana dal and Urad dal.
  2. Add mashed garlic and red chilly roast it.
  3. Now add the soaked moong dal and roast in oil for 2 min.in Low flame.
  4. Add Onion and fry.
  5. Add chopped Spinach& salt per taste.Close the lid and cook .
  6. Cook Till the spinach leaves shrink and Half cooked.
  7. Finely add shredded Coconut.(Optional)
  8. Ready to serve.
Note:I didn't use coconut.,if u like can add the shredded coconut and switch of the flame.

Okra Fry/Vendaikai Poriyal







Ingredients:

  1. Okra-20 nos
  2. Mustard/Channa dal/Urad dal-1/2 teaspoon each
  3. Oil-2 teaspoon
  4. Turmeric powder
  5. Salt/Red chilly powder-to taste
  6. Sambar powder-1 tespoon
Cut the edges ,and wash the Vendaikai.Then cut in to lengthwise (R)any desired Shape.




Method:

  1.  Heat Oil in pan,Add mustard,channa dal,urad dal and fry well
  2. Add Okra/Vendaikai ,put all dry ingredients give a mix and cook in medium heat.
  3. Don't put the lid while cooking
  4. This recipe will take maximum15 mns to cook,In between,regularly give a mix.otherwise Vendaikai/Okra will stick in bottom.
  5. Finally u can add some shredded coconut.(Optional)
  6. Serve with any type of rice.

Vaazhakkai Podimas/Vaazhakkai Puttu/Plantain Podimas

Ingredients:
  1. Raw Banana/Vaazhakkai-1
  2. Onion-1 medium chopped
  3. Green chilly-2 nos slit
  4. Garlic-2 mash it
  5. Mustard/channa dal-1teaspoon
  6. shredded coconut -2table spoon
  7. Oil-1teaspoon                                                    
Cut the both edges and,break in to two piece,Steam cook the Raw banana/vaazhakkai,with added salt and turmeric powder.Remove the skin,and grate keep aside.
Method:


  1. Heat oil in the pan,splutter mustard,channa dal,and curry leaves,green chillies
  2. Now add garlic and onion and fry well.
  3. Add grated Plantain/Vaazhakkai and mix it well add salt and turmeric powder.
  4. Finally add shredded coconut and cilantro.
  5. Ready to serve with,all type of satham.

This's a simple recipe.

Beet root poriyal

Ingredients:
Beet root-2cup chopped like a onion
Split moong dal-4tablespoon
Channa dal(kadali parupu)-1teaspoon
Urad dal-1/2teaspoon
Musturd seeds-1/2teaspoon
Curry leaves-7
Red chilly powder-1teaspoon
Turmeric powder-1/2teaspoon
Shredded Coconut-1tablespoon
Oil-2teaspoon
Salt-to taste
Water -3tablespoon to sprinkle


Instead of adding redchilly powder u can add whole red chilly are green chilly.In beetroot it self salt taste is   there so no need to add more salt in this.


     Soak Yellow moong dal in water for 15mns.before adding in to the pan drain all water and keep aside.


 Method:
  • Put the oil in the pan let it heat for 3 mns.Stove have to be in  medium flame.
  • Once it's get hot add Musturd seeds,curry leaves,channa dal,urad dal fry till it get golden brown.
  • Now add the drained moong dal, fry well till dal turns golden color.minimum 3 mns.




  • Add chopped Beetroot in to the pan, mix well add salt,turmeric powder,red chilly powder and sprinkle some water on it,now close the lid for 10 mns in between give a mix for 2-3 times.
  • Finally add shredded coconut and switch off the stove,give a nice mix.
  • Simple beetroot poriyal is done.



Poriyal...  is very very common in all homes in tamilnadu.In everyday cooking Poriyal takes a big part.In the same way can you make Carrot poriyal also.It'll go with Curd rice,rasam satham,all type of kuzhambu satham.
