Tofu Bhurji/Scrambled Tofu




Am posting this Recipe for Blog hop Wednesday, for this Month,Started by Radhika of "Tickling Palates".This time i was very very late in Posting my Recipe!!For this week I Paired with Veena krishnakumar of, ”Veg Nation”.She's Having a wonderful space with Yum recipe,do check out here Blog!!
Sorry Veena,for the late post. She made this Buriji with Paneer,but here i have used Tofu, but all others i followed her recipe!!

Ingredients:
1)      Tofu-1 cup
2)      Onion-1 medium (Chopped)
3)      Tomato – 1 medium (Chopped)
4)      Red Chilly Powder-2 teaspoon
5)      Cumin Powder-1 teaspoon
6)      Coriander Powder-1 teaspoon
7)      Turmeric  Powder-1/2 teaspoon
8)      Salt-To Taste
9)      Cilantro
10)  Oil-1 tablespoon

v  Squeeze all water from the Tofu. Drain it, completely as much as you can .
vScramble well with hands. Keep aside.

Method:

  •   Take Microwave  safe bowl, add oil and cumin seeds. Keep it for 2 mins in microwave.


  •  Add Onion, stir it .Keep it for 2 mins .

                                             
 §Take out, add tomato, turmeric powder and salt to it. Mix it up. Keep it for 2 more mins.

                                            
  §  You will get in to complete mushy form. Now add the Tofu, Cumin Powder, Coriander Powder and Chilly Powder. Mix again with a spoon. Keep it for 5 mins.

                       

 §  Tofu will have more water by itself, so microwave it till all moisture evaporates.( Depends on  Microwave mode, keep it for more mins )
§   Finally take it out, mix it well.Add some Cilantro on top.
§  That’s it!! Simple Buriji’s is ready now!!

  • Serve hot with Roti,Rice.. Enjoy :)
